Hot water crust:
2/3 cup (150g) unsalted butter
2/3 cup (160ml) water
2 1/2 cups (375g) ap flour
1/2 tsp salt

OLD FASHIONED COCONUT PIE with MERINGUE
Old Fashioned Coconut Pie with Meringue
1 cup plus 2 tablespoons Sugar
2 Tablespoons Flour
1 Tablespoon Corn Starch
2 cups Milk
Pinch of Salt
3 Egg Yolks, beaten
1 tablespoon Butter
1 Teaspoon Vanilla Extract
1 cup Sweetened Coconut Flakes
In a saucepan whisk together the sugar, flour, corn starch and salt. Add milk and stir together. Begin heating for a minute or two until warm. Remove from heat and add egg yolks. Stir in really well and return to heat. Cook on medium heat continuously stirring until thickened. Usually takes about 3 to 5 minutes. Remove from heat and add butter, vanilla extract and coconut. Stir together well and pour into cooled crust. Let cool while making the meringue.
Meringue Recipe:
3 to 4 Egg Whites
1/4 teaspoon Cream of Tartar
6 tablespoons Powdered Sugar
1/4 cup Sweetened Coconut Flakes plus more for sprinkling on top
Beat egg whites and cream of tartar together with an electric mixer until foamy. Continue beating while adding the powdered sugar. Keep mixing until glossy and stiff peaks have formed. Fold in Vanilla and Coconut. Dollip on top of the pie and spread to cover the custard all the way to the crust. Using a knife or spatula make peaks across the pie that the oven will brown. Sprinkle extra coconut on top. Slide into a 400 degree F Oven and bake until the peaks are toasted. Refrigerate until ready to serve.

ingredients
1/2 tablespoon cornstarch
1 teaspoon salt
1 teaspoon chicken bouillon
1/4 teaspoon parsley
1 teaspoon creole seasoning
1 teaspoon Cajun seasoning
1 teaspoon paprika
2 tablespoons unsalted butter for the grits 1 tbsp. for the shrimp
2 bacon strips
sausage
1/4 cup chopped onion
1/2 cup red and yellow bell peppers
1 1/2 cup cheddar cheese
1 cup of instant grits
4 cups chicken broth
1 cup heavy cream for the grits (1/3 cup for the shrimp)
10-15 jumbo shrimp
1 tsp minced garlic

IMPOSSIBLE BUTTERMILK PIE WITH BUTTERMILK WHIPPED CREAM
Impossible Buttermilk Pie with Buttermilk Whipped Cream
1-1/2 cups Sugar
1 cup Buttermilk
1/2 cup Homemade Baking Mix or Bisquick
1/3 cup Butter, melted (I browned my butter)
1 teaspoon Vanilla Extract
3 Eggs
1/4 teaspoon Lemon Zest and juice of half the Lemon
Preheat oven to 350 degrees F. Grease a 9-inch pie plate. Mix all the above ingredients for 1 minutes with a handheld mixer in a large bowl. Pour into the greased pie plate and bake for 30 minutes or until a knife inserted into the middle comes out clean. Let cool and enjoy with the following Buttermilk Whipped Cream:
3/4 cup COLD Heavy Whipping Cream
1/4 cup COLD Buttermilk
1/4 cup Confectioner's Sugar (powdered sugar)
In a large bowl beat with a hand mixer the heavy cream and buttermilk until soft peaks form. Add the sugar and mix until incorporated and soft peaks are formed. Do not overmix or it will become butter.
