ingredients:

Biscuits 120gm
butter 30gm

gelatin 10gm
water 40ml

Cream cheese 200gm
Honey 4tbsp
yogurt 3tbsp.
whipping cream 200gm


Orange juice 100ml
sugar 2tbsp
1/2 tsp yellow food colour ( optional)
200gm Whopping cream
3tbsp Honey

1tbsp gelatin
3tbsp water


( Freeze for 2-3 hour. )

설탕을 넣지 않고 꿀로 단맛을 낸 허니 치즈케이크를 만들었어요~
흰색 부분은 마스카포네치즈, 꿀, 레몬즙으로 맛을 내고 노란 치즈케이크는 크림치즈와 요거트로 맛을 냈는데
꿀과도 잘 어울리고 설탕이 없어 많이 달지 않답니다~ 단맛을 더 원하시면 꿀이나 설탕을 추가로 더 넣으셔도 좋을 것 같아요~^^
집에 실리콘 몰드가 있어서 사용해봤는데 노란 치즈케이크가 벌집모양 같아 꿀 느낌을 내주더라구요~~
몰드에 얼린 치즈케이크는 단단하게 얼려야 모양을 잡기에 좋답니다~
위에 꿀물을 부어 마무리하니 꿀 맛도 많이나고 케이크를 더 투명하고 반짝이게 해주네요~~
심플하지만 밋밋하지 않고 예쁜 노오븐 치즈케이크 인 것 같아요~^^

▶틀 사이즈 Mold size : 15cm × 7cm

▶재료

크림치즈 75g
플레인요거트 40g
꿀 30g
젤라틴 3g
50% 정도 휘핑한 생크림 60g
식용색소 (노랑, 주황)

버터 비스킷 85g
녹인 무염버터 40g

마스카포네치즈 200g
꿀 65g
레몬 1/2개
젤라틴 4g
50% 정도 휘핑한 생크림 120g

물 150g
꿀 50g
젤라틴 5g

▶레시피
1. 크림치즈를 부드럽게 풀고 플레인 요거트, 꿀을 넣고 섞은 뒤 녹인 젤라틴을 넣고 섞는다.
2. 50% 정도 묽게 휘핑한 생크림을 넣고 섞고 노랑, 주황 식용색소를 조금 넣고 섞은 뒤 짤주머니에 담는다.
3. 실리콘 몰드에 반죽을 붓고 냉동실에서 2시간 정도 굳힌다.
4. 부순 버터비스킷에 녹인 무염버터를 넣고 섞은 뒤 15cm 무스틀에 넣고 꾹꾹 눌러 평평히해 냉장실에 넣어둔다.
5. 마스카포네치즈에 꿀을 넣고 섞고 레몬 1/2개를 즙을 내 넣고 섞는다.
6. 녹인 젤라틴을 넣고 섞고 50% 정도 묽게 휘핑한 생크림을 넣고 섞는다.
7. 틀에 붓고 냉장실에서 2시간 정도 굳힌다.
8. 실리콘 몰드에 단단하게 얼린 치즈케이크를 꺼내고 굳은 마스카포네치즈케이크 위에 올리고 냉장실에 넣어둔다.
9. 물에 꿀을 넣고 섞고 녹인 젤라틴을 넣고 섞은 뒤 틀에 붓고 냉장실에서 2시간 정도 굳힌다.

Food coloring (yellow, orange)

85g Butter biscuits
40g Melted unsalted butter 

200g Mascarpone cheese
65g Honey
1/2 Lemon
4g Gelatin
120g Whipped cream (whipped up 50%)

150g Water
50g Honey
5g Gelatin

honey 25g / 1Tbsp
vegetable oil 25ml / 2Tbsp
fresh milk 30ml / 2Tbsp
cake flour 50g / 4Tbsp
egg whites 3
caster sugar 25g / 3Tbsp
cheddar cheese sliced 2 / 20g
whipping cream 30ml / 2Tbsp
unsalted butter 30g / 2Tbsp
honey 15g / 2tsp

Pan Size 16cm/6

Bake at 170°C / 340°F for 30-35 minutes
Bake at 250°C / 480°F top burner for 7-10 minutes
