Shortbread Cookies

Ingredients
3/4 pound unsalted butter, at room temperature
1 cup sugar, plus extra for sprinkling
1 teaspoon pure vanilla extract
3 1/2 cups all-purpose flour
1/4 teaspoon salt
6 to 7 ounces very good semisweet chocolate, finely chopped
Directions
Preheat the oven to 350 degrees F.
In the bowl of an electric mixer fitted with a paddle attachment, mix together the butter and 1 cup of sugar until they are just combined. Add the vanilla. In a medium bowl, sift together the flour and salt, then add them to the butter-and-sugar mixture. Mix on low speed until the dough starts to come together. Dump onto a surface dusted with flour and shape into a flat disk. Wrap in plastic and chill for 30 minutes.
Roll the dough 1/2-inch thick and cut with a 3 by 1-inch finger-shaped cutter. Place the cookies on an ungreased baking sheet and sprinkle with sugar. Bake for 20 to 25 minutes, until the edges begin to brown. Allow to cool to room temperature.
When the cookies are cool, place them on a baking sheet lined with parchment paper. Put 3 ounces of the chocolate in a glass bowl and microwave on high power for 30 seconds. (Don't trust your microwave timer; time it with your watch.) Stir with a wooden spoon. Continue to heat and stir in 30-second increments until the chocolate is just melted. Add the remaining chocolate and allow it to sit at room temperature, stirring often, until it's completely smooth. Stir vigorously until the chocolate is smooth and slightly cooled; stirring makes it glossier.
Drizzle 1/2 of each cookie with just enough chocolate to coat it.

Cookie Recipe ( Crispy melt away cookie BASE dough) :
- 750 gr soft room temp Butter ( 6 2/3 sticks )
- 300 gr Powdered Sugar ( 2 1/2 cups)
- 3 room temp X Large Egg Whites
- 900 gr All purpose Flour ( 6 cups + 1/2 cup)
- 3 tsp Vanilla
- 1/4 tsp Salt

Divide the dough into 5 equal portions and with each dough make 5 different cookies:
■ Vanilla Butter Cookies:
Leave the first dough as is.
You'll need a piping bag and a tip of your choice.
■ Linzer Cookies:
to the second cookie dough, add:
- 60 gr Almond Flour (1/2 cup)
- 40 gr All Purpose Flour ( 4 tbsp)
- 1/2 tsp Almond Extract
- Jam of your choice
■ Gingerbread *Style* Cookies:
to the third cookie dough, add:
- 2 3/4 tsp Ginger
- 3 tsp Cinnamon
- 2 or 3 tsp Cocoa Powder
- 40 gr Flour ( 4 tbsp)
For stronger gingerbread flavor add more ginger.
■ Sugar Cookies:
to the fourth cookie dough, add:
- 50 gr All Purpose Flour ( 5 tbsp)
- 1/2 tsp Vanilla
■ Chocolate Sugar Cookies:
to the fifth cookie dough, add:
- 60 gr Sweetened Cocoa Powder ( 7 1/2 tbsp) ( Bloom the cocoa with 5 tbsp hot Milk) If you're using UNsweetened cocoa powder you may have to add 1 tbsp more icing sugar.
- 20 gr All Purpose Flour ( 2 tbsp)
- Melted good quality chocolate to fill the cookies

Holiday Cashew Shortbread Cookies Recipe - courtesy of Caitlin Daniels
INGREDIENTS: (makes 4 dozen cookies)
● 10 oz (2 cups) unbleached flour (we use Shepherd’s Grain low-gluten flour)
● 8 oz. (2 sticks) unsalted butter, cut into 1-inch cubes
● 5 oz (2/3 cup) granulated sugar
● 1 oz (¼ cup) fine rice flour
● ¼ teaspoon. salt
● 2 oz toasted cashews (if salted, omit above salt from recipe.)
INSTRUCTIONS:
● In a food processor fitted with a blade attachment, pulse all ingredients until
the ingredients are equally distributed, and the dough comes together in
a crumbly mass.
● Turn the dough out onto a lightly floured piece of parchment paper.
● Shape and flatten the dough into a disk.
● Lightly sprinkle the dough with flour.
● Using a rolling pin, roll the dough evenly to ¼ inch thickness.
● Use cookie cutters to cut the dough into desired shapes.
● Place cookies on prepared sheet pans.
● Bake until lightly golden in color (approximately 10-12 minutes.)
● From time to time, we like to dip our shortbread in tempered, melted chocolate.
VARIATIONS:
Instead of cashews, feel free to substitute other nuts, lemon zest, orange
zest, baking spices, candied ginger, or whatever combination of these
flavors you think might be to your liking! We love to make lavender
shortbread in the summer by substituting 2 T. fresh lavender for the nuts.
In the winter, we make spice shortbread by adding pie spices and
candied ginger to the dough. Experiment, and have fun!
