How To make Holiday Appetizer Quiche
CRUST::
1 1/2 cups unsifted all purpose flour
1 1/2 cups finely crushed butter-type
crackers 2/3 cup butter flavor shortening
FILLING::
2 cups shredded Swiss cheese
2/3 cup chopped ham cooked Or
2/3 cup sausage :
cooked & Crumbled
or 2/3 cup pepperoni :
diced OR
bacon cooked and crumbled 3/4 cup thinly sliced green onions and tops
1/4 cup snipped fresh parsley
1 jar diced pimentos well drained (1/3
:
c.) 5 eggs
1 cup whipping cream
1 cup half and half
1 teaspoon salt
1/4 teaspoon pepper
Preheat oven to 400 degrees for crust, combine flour and cracker crumbs. Cut in butter flavor shortening until mixture resembles coarse corn meal. Sprinkle wi th 1/2 cup water, a tablespoon at a time. Toss with fork until crumbs are compl etely moistened. Press mixture into bottom of ungreased 15 x 10 x 1 inch pan. P rick crust with a fork. Sprinkle Swiss cheese, ham, onions, parsley, and pimien tos evenly over crust. Beat eggs, cream, half and half, salt, and pepper. Pour over filled crust. Bake at 400 degrees for 25 to 30 minutes or until set. Cool for 5 minutes. Cut in 1 1/2 by 2 inch pieces. Serve warm. Makes 50 appetizers. NOTE: Crust may bubble during baking and need to be pricked with a fork again. Recipe from "One Million Recipes CD"

Quick Mini Quiche Recipe
DESCRIPTION:
These easy-to-prepare, bite-sized quiches add a Mini Fillo Shell crunch to a classic appetizer.
INGREDIENTS:
1 egg
1/2 cup evaporated milk
1/4 teaspoon each: basil, salt, garlic and parsley
1/8 teaspoon white pepper or cayenne
2 packages (30 count) Athens® Mini Fillo Shells
1/2 cup shredded Swiss or Gruyere cheese
1/3 cup cooked crumbled bacon
2 Tablespoons each: minced onion and red bell pepper
DIRECTIONS:
Lightly beat together egg, milk and seasonings. Into each Mini Shell place 1 teaspoon of cheese, 1/2 teaspoon bacon and 1/4 teaspoon each onion and pepper.
Pour 1 teaspoon egg/milk mixture into Mini Shells. Bake in a preheated 350°F oven for 12-15 minutes.

In this episode of Teacher Tutorials Ms Fearnley will demonstrate how she makes her Mini Quiche, a perfect no fuss catering recipe for any event big or small.
Mini Quiche Recipe:
-Preheat oven to 200 degrees
-Grease a muffin tray well with vegetable oil.
-Mis en place: ½ cup grated tasty cheese, ½ cup finely diced ham, bacon or meat of your choice, 1 spring onion, washed and finely sliced.
-Cut out large circle in shortcrust pastry. Line muffin tray with pastry circles. Be sure to dock the pastry with a fork to remove air bubbles.
-Fill each pastry circle with some cheese, ham and spring onion.
-Make a custard by whisking together 3 eggs and half a cup of cream.
-Pour custard over filling. Do not overfill.
-Bake for 20 minutes or until puffed and golden.
