How To make Hijiki Nimono
2 oz Hijiki
2 oz Carrots
1 Age (deep-fried tofu) puff
1/3 Block hard tofu
5 Green beans
2 tb Sesame oil
1 c Dashijiru (soup stock)
3 tb Shoyu (soy sauce)
2 tb Sake
2 tb Mirin
1 ts White sesame seeds
-- lightly sauteed Seven pepper; to taste - (Shichimitogarashi) A.) Rinse the hijiki in a fine-mesh strainer under cold running water. In 3 times the amount of warm water, soak for 10 to 15 minutes. Remove the
hijiki with a tea strainer. (Sand and pebbles will sink to the bottom of the bowl.) Return to fine-mesh strainer and drain off excess water. Grate the carrots into matchstick slivers. Dip the age puff for 30 seconds in boiling water, and cut into matchstick slivers. Place tofu in a heated skillet and mash with a spatula. Let it simmer in its own water until reduced to small crumbs. Snap the ends off the green beans and place in boiling water for 1 to 2 minutes. Immerse in iced water, drain, and cut into 1/2-inch-long pieces. B.) In a heated skillet, saute sesame oil, hijiki, carrots, age, and tofu (all completely drained of water). When ingredients have acquired a shiny appearance, add dashijiru, shoyu, sake and mirin. Reduce heat to low and cook, stirring frequently, until liquid has been absorbed. Turn off heat and add green beans. C.) Place B in serving dish, sprinkle with sauteed sesame seeds. If you like, add seven-taste pepper to taste. Hijiki Mixed Rice | Japanese Takikomi Gohan Recipe | Lunch Bento | wa's Kitchen
I had hijiki gohan at the restaurant the other day. It made me want to fix some at home. Here the recipe uses a cooking pot for those who do not have a rice cooker. The result is slightly more al dente. I hope you will like it.

Ingredients :
- 300g uncooked Japanese rice
- 8g hijiki
- 2 tsp vegetable oil
- 1/2 carrot (~30g)
- 80 to 90g chicken thigh
- 70g onion
- 1.5 tbsp mirin
- 1 tbsp soy sauce
- 1 tbsp cooking sake or white wine
- 1/4 tsp sugar
- 1.5 tsp dashi powder
- 310ml water
- a dash of salt if necessary
- some green onion

* 1/2 Carrot
* 80g(2.8oz) Pork
* 1 Deep-fried tofu
* 1Tbsp Cooking oil
* 1/2 cup(100ml/3.4floz) Water
* 1/2tsp Powder Dashi
* 2Tbsp Sugar
* 1Tbsp Mirin
* 2Tbsp Soy sauce
※1/2 cup(100ml/3.4floz) Water&1/2tsp Powder Dashi
or 1/2 cup Dashi broth

About Sake & Mirin
⭐️Cooking sake substitutes
①white wine
②You can omit it.
The main reason for using cooking sake is to eliminate gamy or fishy smells in seafood or meat. So in many times, it’s optional to add it or not.
⭐️ Mirin substitutes
* ①cooking sake and sugar.
* If you don’t have mirin, you can try this.
* eg. 1Tbsp Mirin → 1 Tbsp cooking sake + 1tsp sugar
*
* ②water and sugar
* If you can’t use alcohol for religious or other reasons, you can substitute mirin with water and sugar.
* eg. 1Tbsp Mirin → 1 Tbsp water + 1tsp sugar

* 水 1/2カップ
* 粉末だし 小1/2
* 砂糖 大2
* みりん 大1
* 醤油 大2
※水 1/2カップ&粉末だし 小1/2
or だし汁1/2カップ

酒 とみりんについて
⭐️酒の代替え品
①白ワイン
②使わない。
料理酒を使う主な理由は、魚や肉の生臭さを取り除くためなので、宗教的な理由やその他の理由でアルコールが使えない場合、省略してもよいです。
⭐️ みりんの代替え品
①料理酒と砂糖
みりんがなければ、試してみてください。
例)みりん 大1 → 料理酒 大1 + 砂糖 大1
②水と砂糖
宗教的な理由やその他の理由でアルコールが使えない場合、水と砂糖でも大丈夫です。
例) みりん 大1 → 水 大11 + 砂糖 大1
