Once the dough has risen, turn it onto your work surface, punch it down, and divide immediately into as many hunks as you want to make bagels. For this recipe, you will probably end up with about 15 bagels, so you will divide the dough into 15 roughly even-sized hunks. Begin forming the bagels. There are two schools of thought on this. One method of bagel formation involves shaping the dough into a rough sphere, then poking a hole through the middle with a finger and then pulling at the dough around the hole to make the bagel. This is the hole-centric method. The dough-centric method involves making a long cylindrical "snake" of dough and wrapping it around your hand into a loop and mashing the ends together. Whatever you like to do is fine. DO NOT, however, give in to the temptation of using a doughnut or cookie cutter to shape your bagels. This will pusht them out of the realm of Jewish Bagel Authenticity and give them a distinctly Protestant air. The bagels will not be perfectly shaped. They will not be symmetrical. This is normal. This is okay. Enjoy the diversity. Just like snowflakes, no two genuine bagels are exactly alike. Begin to preheat the oven to 400 degrees Farenheit. Once the bagels are formed, let them sit for about 10 minutes. They will begin to rise slightly. Ideally, they will rise by about one-fourth volume... a technique called "half-proofing" the dough. At the end of the half-proofing, drop the bagels into the simmering water one by one. You don't want to crowd them, and so there should only be two or three bagels simmering at any given time. The bagels should sink first, then gracefully float to the top of the simmering water. If they float, it's not a big deal, but it does mean that you'll have a somewhat more bready (and less bagely) texture. Let the bagel simmer for about three minutes, then turn them over with a skimmer or a slotted spoon. Simmer another three minutes, and then lift the bagels out of the water and set them on a clean kitchen towel that has been spread on the countertop for this purpose. The bagels should be pretty and shiny, thanks to the malt syrup or sugar in the boiling water. Once all the bagels have been boiled, prepare your baking sheets by sprinkling them with cornmeal. Then arrange the bagels on the prepared baking sheets and put them in the oven. Let them bake for about 25 mintues, then remove from the oven, turn them over and put them back in the oven to finish baking for about ten minutes more. This will help to prevent flat-bottomed bagels. Remove from the oven and cool on wire racks, or on a dry clean towels if you have no racks. Do not attempt to cut them until they are cool... hot bagels slice abominably and you'll end up with a wadded mass of bagel pulp. Don't do it. Serve with good cream cheese. TO CUSTOMIZE BAGELS: After boiling but before baking, brush the bagels with a wash made of 1 egg white and 3 tablespoons ice water beaten together. Sprinkle with the topping of your choice: poppy, sesame, or caraway seeds, toasted onion or raw garlic bits, salt or whatever you like. Just remember that bagels are essentially a savory baked good, not a sweet one, and so things like fruit and sweet spices are really rather out of place. ▢ 1 cup greek yogurt plain
▢ 1 cup flour self rising
Optional
▢ 1 dash salt
▢ 1/2 cup Everything Seasoning
INSTRUCTIONS
Preheat oven to 375° F.
Line a baking sheet with parchment paper spray with oil.
In a mixing bowl, add plain Greek yogurt, the self-rising flour and the pinch of salt. Using a rubber spatula, mix until crumbles form.
Turn the dough out onto a lightly floured work surface and form into a ball.Knead the dough 15 or 20 times or until dough forms.
Divide into 4 equal pieces and roll into 3/4 inch thick ropes and from a circle.
Brush with the egg wash and sprinkle both sides with the seasoning of your choice.
The optional egg wash will add a shine and help the seasoning adhere to the bagel. If you aren't using an egg wash, brush the bagel with water to help the seasoning stick.
Conventional Oven: Bake on the top rack of the oven for 25 minutes.
Air Fryer: Preheat the air fryer 325°. Bake in batches without crowding leaving at least 2 inches around the bagel dough. Bake 11 to 12 minutes until golden. There is no need to flip them.
Let the bagels cool for at least 20 minutes on a cooling rack before cutting.
Store in an airtight container for three days or wrap tightly and store in freezer for 1 month.

1 egg white, whisked
4 oz. cream cheese, cut into 8 cubes

Directions
Preheat your oven to 375 degrees and line a baking sheet with parchment paper.
Next mix your flour, baking powder and salt together in a bowl. Add your greek yogurt and stir with a large spoon until a sticky dough forms.
Once the dough is formed, divide it into 8 equal balls. Sprinkle some flour over your work station and lightly flour hands.
Then place the balls on your work station and flatten them into an even layer. Once flattened, place a cube of cream cheese in the center of each and fold up the sides of your dough around it to seal it in.
Then place the balls on your prepared baking sheet and brush them with your whisked egg white.
Sprinkle some Everything seasoning over the top of each ball and bake for 25 minutes or until golden brown. Enjoy!

How to Make Bagels: Chewy and Golden Homemade Bagel Recipe
500g x Strong White Bread Flour
5g x Dried Yeast
10g x Fine Salt
250ml x Warm Water
20g x Caster Sugar
50ml x Vegetable oil + Extra for greasing
To Glaze
1 x Free Range Egg (beaten)
Seeds of Choice
1. Place the flour, yeast, salt, water, caster sugar, and vegetable oil into a bowl.
2. Mix to form a dough and then turn it out onto a clean work surface and knead for 5 to 10 minutes until smooth and elastic. Shape into a ball and place into an oiled bowl, cover with a clean damp tea towel, and allow to rise until it has doubled in size.
3. Once doubled in size knock the air out and divide the dough into 12 equal-sized pieces.
4. Roll each dough piece into 12 to 15-cm sausage shapes. Wet each end with water and press together to form a ring. Leave to prove on a lightly oiled metal or plastic tray and cover with a damp clean cloth until doubled in size.
5. Preheat the oven to 200°C, lightly oil some baking sheets and place a large, wide pan over medium heat with roughly 10cm depth of water in and bring to a boil.
6. Once they have doubled in size they are ready for poaching, you will need to do this in batches. Turn the water down to a simmer and gently place the bagels in and cook for one minute on each side. Place onto a clean tea towel to drain.
7. Place the poached bagels onto the oiled baking trays and brush them with the beaten egg. Sprinkle with seeds of your choice or leave plain. Bake in the preheated oven for 15 minutes until glossy and golden brown. Place on a cooling rack to cool.

Ingredient Dough Bagels
Ingredients:
3 cups self-rising flour
2 cups Greek yogurt
1 packet onion soup (optional)
1 egg (egg wash)
Everything Seasoning or Poppy/Sesame seeds (your choice)
Instructions:
Mix flour and yogurt until it forms a dough
If it’s too wet, add a little flour or if too dry, add a few drops of water
Divide into 8 equal parts
Roll into strip then fold into circle
Place on pan and pat down to make circle even all around
Brush each with egg wash
Sprinkle Bagel topping on
Bake at 375 degrees for 20 minutes or until golden brown
Remove from oven to cool
Add your favorite topping (butter, cream cheese, jelly)

Recipe (
1 1/4 cups warm water (you can use tap water, just make sure it’s warm!)
2 1/4 tsp instant yeast (or one packet)
2 tsp salt
540 grams bread flour
For extra flavor, you can add dried powders into your dough… for onion bagels or everything bagels, add a tsp of onion powder to the dough mixture if you want to!)
For fresh onion bagels, add 1/2 cup of fresh or frozen onions to the dough; it will help if you drain off some of the excess onion juice first. To do this, microwave onions if frozen and use a strainer to remove liquid. If you are using fresh onions, cook in non stick pan until translucent and add to dough.
Additional 2 tsp salt
2 tsp baking soda
Directions:
1. Add all ingredients to bowl of stand mixer. Knead dough on 2 if using a Kitchenaid stand mixer for 2-3 minutes. Add a little more water if dough hasn’t come together in 2-3 minutes. Continue kneading the dough for an additional 4 minutes.
2. Place dough ball in a lightly greased bowl and cover with a damp tea towel. Let rest until doubled in size (60-90 minutes)
3. Once doubled, cut dough into 8 equal pieces. I like to cut the dough into quarters, and half each quarter.
4. Preheat oven to 400 degrees and boil a pot of water.
5. Roll each section of dough into a ball and using your thumb, poke a hole in the center. Repeat for each section of dough.
6. Boil pot of water and add additional salt and baking soda (you can also use honey or molasses if desired)
7. Place bagels in boiling water for 60 seconds and then flip. Remove from water for the 2 minutes in water bath.
8. Top with desired spices if needed (think everything bagel seasoning, onion flakes, etc.)
9. Bake bagels for 15-20 minutes until golden brown on top & enjoy!
