2 c Nuts 1 c Dates 2 c Fine coconut 1 c Brown sugar 2 Eggs and eggs. Mix all together. Form into small rolls. Roll into some extra coconut to cover each one. Bake until brown at about 325 degrees until coconut is slightly browned. -----

This quick and easy Hedgehog Slice is filled with crushed biscuits, coconut, and walnuts for the perfect no-bake treat. Great for lunch boxes, or whenever you’re craving chocolate, it’s hard to beat this easy chocolate slice recipe!

Hedgehog Cake
Ingredients:
2 X 25cm sponge cakes or on single cake tall enough to get two 2.5-3cm slices from.
750g chocolate butter cream frosting
Black frosting
White Frosting
1 Black candy ball for the nose
Chocolate sticks for spikes git to a length of 3.5cm
Instructions:
Remove the dome from the cake and cut into two slices 2.5 – 3cm tall.
Sandwich together the two slices of cake with a little chocolate butter cream frosting
Slice the two sides off the cake leaving a 11cm central section (reserving the off cuts)
Take off tow angels at one end to form a point which will be the nose of the hedgehog.
Take the two semi circular pieces and using more butter cream frosting to place them to form the ‘back’ of the hedgehog. Trimming away and over hang.
Cover the entire cake with a thin layer of butter cream frosting.
Place the off cuts in a bowl and add 3 tbsp of butter cream frosting and break into crumbs.
Use the crumble mix to pad out the sides of the hedgehog and make it more circular and cover with forsting.
Pipe on a ‘brow’ of chocolate frosting and then a thicker layer over the back of the hedgehog.
Smooth with a palate knife.
Using a fork, create texture to mock the hair on a hedgehog.
Add the chocolate sticks to look like spikes and then pipe on a face adding the candy for a nose.
