How To make Haupia Pumpkin Pie
1 cn (1 lb) pumpkin
2 Eggs -- slightly beaten
3/4 c Sugar
1/2 ts Salt
1 t Ground cinnamon
1/2 ts Ground ginger
1/4 ts Ground cloves
1 cn (13 oz) evaporated milk
1 1/2 c Shredded coconut
1 9-inch unbaked pie shell
1 pk Haupia pudding mix
-(2 1/2 oz) 1 c Heavy cream
-- whipped and sweetened
Preheat electric oven to 425?F. In a large bowl, combine pumpkin and eggs. Add sugar, salt, and spices. Stir in milk and 1 cup of the coconut. Pour into pie shell. Bake for 15 minutes; lower heat to 350?F and bake about 40 to 45 more minutes or until filling is set. Cool. Prepare haupia pudding mix according to package directions. Cool slightly, then pour over pie. Chill until haupia is firm. Just before serving, spread whipped cream over pie. Sprinkle with the remaining 1/2 cup coconut. Makes 8 servings. Ingredients:
For the crust:
1¾ cups (220g) flour
2/3 cup (150g) cold butter, cubed
3 tablespoons (37g) sugar
1/4 teaspoon salt
1/2 teaspoon vanilla extract
1 egg yolk
1 tablespoon cold water (or more if needed)
For the filling:
1 can (15oz/425g) pumpkin puree, canned or homemade
2 eggs + 1 egg yolk
1/2 cup (100g) white sugar
1/4 cup (50g) brown sugar
3/4 cup (180ml) heavy cream or evaporated milk or half & half
1 teaspoon vanilla extract
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1/4 teaspoon salt
Whipped cream for serving (optional)
Directions:
1. In a food processor, process flour, sugar and salt. Then add cubed butter and pulse until crumbs are formed. Add egg yolk and cold water, process until dough is formed. Do not over mix.
2. Transfer the dough to a work surface, pat into a ball and flatten into a disk. Wrap in plastic and refrigerate for 1 hour. Then roll out the dough on a lightly floured board. Lightly dust the top of the dough. Roll until the dough is about 1/8 inch thick. Transfer the dough to a 9-inch (23-24cm) pie pan. evenly press the pastry onto the bottom and up the sides of your pan. Trim off the excess dough off the top of the pan. Refrigerate while making the filling.
3. Meanwhile make the filling: in a large bowl whisk eggs and both sugars until smooth. Add pumpkin puree, heavy cream, vanilla extract and spices, stir until combined.
4. Preheat oven to 420F (215C).
5. Fill the crust with the pumpkin mixture and bake for 15 minutes, then reduce the heat to 340F (170C) and bake for 35-45 minutes, until knife inserted near center comes out clean.
6. Let cool completely before serving.
Notes:
• Cover the edges of the pie crust with a pie crust shield as needed to prevent them from over-browning.
• Let the pie to chill completely before serving
• You can use canned or homemade pumpkin puree, but don’t use sweetened.

Recipe:
Crust:
1-1/4c flour
1 TBS sugar
1/2 c cold butter
1/4c ice water
Filling:
15oz can pumpkin purée
2 eggs
1 can evaporated milk
1 c sugar
1 TBS pumpkin spice
1 tsp cinnamon
Haupia:
1 NOH packet Haupia
(1 packet + 1 cup water)

Easy & Tasty Haupia Recipe!! ????
Cook Time 10 minutes
refrigerate 2 hours
Total Time 10 minutes
Ingredients
1 can full fat coconut milk about 14 oz.
5 Tablespoons cornstarch or less, to taste.
5 Tablespoons granulated sugar
3/4 cup water
Instructions
Get an 8x8 inch pan.
Place coconut milk in a small saucepan over medium heat.
Meanwhile, combine sugar and cornstarch in a bowl, and add the water. Whisk until completely combined.
When the coconut milk just starts to simmer, add the sugar/cornstarch mix, and whisk. Keep whisking until the mixture thickens and starts looking slightly translucent. This took me about 10 minutes. When you bring your whisk up, the haupia should flow off of it and you can see the trace of it for a few seconds before it melts away.
Pour into the 8x8 pan and allow to cool on the counter before refrigerating. Refrigerate until solid and completely cooled. If you are using the full 5 tablespoons, you should be able to pull the sides away from the pan and invert the whole thing onto a cutting board. If it seems too soft for that, just cut it while in the pan. Cut into 2 inch pieces (16 pieces total) and serve.
