Differences Between Pho Hanoi and Pho Sai Gon
Pho is one of the most popular dishes in Vietnam. A hot bowl of pho, soft noodles, sweet broth, a little lemon, and a few slices of chili is extremely delicious. But pho in each region has different characteristics in form and a little taste. In today's video, I will show you the differences between Hanoi and Saigon pho.
There are a lot of myths and legends about Pho’s origin. One theory is that Pho was from Vân Cù village in Nam Dinh province, where people carried and sold Pho on bamboo poles to make a living during the 20th century. Another theory is that Pho was popularly rose in Hanoi due to a surplus of beef bones during French rules in the late 1800s, and pot au feu, an excuse for my pronunciation, pot au feu is a famous French dish, very similar to Pho sot vang today, so the French culture might have some influence on Pho. Many people believe that the name Pho was from the Chinese word Phan, in Nguu Nhuc Phan which is a Chinese cow meat noodle soup. In the 1900s, Chinese food vendors call the name of the dish from distance to attract customers ``Nguu Nhuc Phan” and it was shortened to nhuc phan then phan.
During the Vietnam War, there were a lot of northern Vietnamese migrated to the south of Vietnam, and of course they brought Pho recipes with them. After the Vietnam war in 1975, many people fled the country and they built their community and reserved the culture by cooking Pho. And that’s why you see there are a lot of Southern Pho in the U.S, Canada, and other countries. Nowadays, Pho is known worldwide and it’s a beauty of many cultures and historical stories.

INGREDIENTS
Beef bones (enough to fit half the pot)
Brisket
Prime Rib
Ginger
Onion
Salt
Rock Sugar
MSG
Raikon Root
Rice Noodles
Cilantro, Scallions, Onions, Lime, and whatever other toppings you want
Hoison Sauce
Fish Sauce
Sriracha
Aromatics (cinnamon, cardoman pod, star anise, cloves, coriander seeds)
RECIPE (This is for a 3 gallon pot)
1) Boil the bones and brisket in a pot of water for 10 minutes. Strain and clean the funky crud
2) Char some ginger and onion over an open flame, make sure you skin off all the dark char
3) Boil bones again in new water, add charred onions and ginger
4) Add Raikon root, 1/2 golf ball sized rock sugar, 1/4 cup of salt. Let it simmer covered for 8 hours
5) At the 8 hour mark roast the aromatics in a pan until fragrant. Put it in the bag and let it steep for 2 hours then remove.
6) Done, put your bowl together with whatever toppings and meat you want, but not bean sprouts and mint because those are stupid.

1. It Is A Simple Name Which Brings A Lot Of Love.
With a set of ingredients, the making of these ingredients is full of labored love.
The star of “pho” is the broth which can take several hours to get a clear and flavorful broth.
The moment you dig into the soup, you know how much work the chef has put into it.
Therefore “pho” is the most authentic dish of Vietnamese people that every food lover can taste a bit of the love and the hard work in each bite.
2. It Is Elaborate To Prepare.
When it comes to the cooking method of “pho”, it can be described as a time consuming method with a slow cooked beef tendon or tripe.
The simmering process can often take up to 24 hours to create the flavorful broth.
Using the same spice as beef “pho”, the broth of chicken “pho” is made using chicken bones as well as other parts of the chicken.

“Pho” is served in a hot bowl.
It is a perfect dish for a cold rainy day as well as in the winter for one who craves for a warm feeling in your belly.

The white noodles just pop against the clear caramel coloured broth and the slightest bit of pink slices of beef shows.

Vietnamese Pho with beef
This is the ultimate Pho Bo recipe! This shows you how to pack the most flavour into this simple dish, for a real taste of the Hanoi version of this ever popular Vietnamese dish!
It's the combination of charred spices that give it that authentic flavour which I haven't found yet in Vietnamese restaurants here in the UK.
And of course, the quality of the beef, cooked to get all the flavour out of every bone!
This is not the simplest pho recipe you'll find out there, but it's worth the extra effort!
Ingredients (for 4 generous bowls)
500g beef ribs
1 beef joint (about 1kg)
300g beef steak (any cut will do)
200g flat noodles
Chives 20g
5 spring onions
Coriander 20g
1 Cardamom pod
Coriander seeds 5g
1 Cinnamon stick
1 Star anise
2 Shallots
Ginger 200g
1 White onion
Garlic 10 cloves
1 Chili
Rock salt 1 tbsp
Sugar 1 tbsp
Fish sauce 2 tbsp

Here are all the places we ate:
1. Xôi Xéo
Location: Xôi Mây (
Price: 15,000 VND ($0.63) per bowl
One of the common breakfasts in northern Vietnam is sticky rice with toppings. She has to be one of the fastest food assemblers in all of Vietnam!
2. Bún Riêu
Location: Bún riêu Hàng Lược (
Price: 75,000 VND ($3.15) for fully loaded bowl
Pho is extremely common in Vietnam, but there are so many other noodle soups, and bun rieu is one of the best. This place is extremely popular and we ordered it fully loaded!
3. Bún Chả
Bún Chả Hàng Quạt (
Price: 45,000 VND ($1.89) per portion
If there’s one dish that you have to eat when you’re in Hanoi, Vietnam, it would be bun cha for lunch. The combination of grilled pork in a soup of fish sauce with noodles and vegetables is heavenly.
4. Bún ốc
Location: Bún ốc cô Huệ (
Price: 40,000 VND ($1.68) per bowl
One of Khoa’s favorite local dishes is bun oc, or snails and noodles. We specifically tried the cold version with giant snails!
5. Cháo

Another common dish in Vietnam is chao, or congee, rice porridge. Rather than being chunk with rice grains, this was one of the smoothest bowls of congee ever.

One more extreme Vietnamese food we had to try was cha ruoi, a sandworm pancake. A little bizarre, but proved to be one of the best meals of the day!
