Poor Man's Soup (Old Fashioned Beef & Macaroni Soup)
❤️ SUBSCRIBE: Poor Man’s Soup, Goulash, Cowboy Soup, Beef and Macaroni soup….whatever you wanna call it, it’s downright delicious! We grew up calling it Poor Man’s Soup and Beef and Macaroni Soup. It was the soup that my grandmother made on Fridays and it was usually a way to use up any left over veggies from the week. Any veggie you throw into this soup is tasty! For my husband I usually throw in some diced potatoes and bell pepper. But my boys and I like it with just onions and garlic! Simple, easy, and classic!
This old-fashioned beef and tomato soup is so hearty and filling! It’s been years since I’ve made this soup and it definitely belongs on my channel because it's such a keeper! I hope that you enjoy as much as we do!

Beef Minestrone Soup #wintersoups #delicioussoups #casouthernbelle
Everyone has a different version of Minestrone Soup! this is mine! This make ahead soup can last at least three days refrigerated. Typically, I make it over the weekend have it for dinner and meal prep it for two lunches during the week to save time!
My Beef Minestrone Recipe Ingredient list
o 2 tablespoons extra-virgin olive oil
o 2 pounds of beef stewing meat, trimmed and cut into inch cubes
o 1 medium yellow onion, quartered
o ½ red onion, quartered
o 2 medium carrots, peeled and chopped
o 2 medium ribs celery, chopped
o 2 cups chopped seasonal vegetables (yellow squash, zucchini,
celery, red and green peppers)
o 2 cloves garlic, chopped
o 1 tablespoon of fresh oregano
o 1 teaspoon of fresh thyme
o ½ teaspoon of fresh rosemary
o 2 ½ cups to 3 cups of water
o 1 1/2 tablespoon Italian seasoning
o Season salt and black pepper to taste
o ½ cup of small shell pasta (Ditalini)
o 1 can (12 ounces) Red kidney beans
o Freshly grated Parmesan cheese, (optional)

Ingredients
2 Tbsp olive oil, divided
1 lb lean ground beef
1 1/2 cups chopped yellow onion
1 cup diced carrots
1 cup diced celery (did not use)
3 cloves garlic, minced (1 Tbsp)
3 (8 oz) cans tomato sauce
2 14.5 oz cans low-sodium chicken broth
1/2 cup water, then more as desired
1 (15 oz) can diced tomatoes
2 tsp granulated sugar
1 1/2 tsp dried basil
1 tsp dried oregano
3/4 tsp dried thyme
1/2 tsp dried marjoram
Salt and freshly ground black pepper
1 cup dry ditalini pasta
1 (15 oz) can dark red kidney beans, drained and rinsed
1 (15 oz) can great northern beans, drained and rinsed
Finely shredded Romano or Parmesan cheese , for serving
3 Tbsp minced fresh parsley
***My additions...
1 tablespoon Onion Powder
1 tablespoon Garlic Powder
Instructions
Heat 1 Tbsp olive oil in a large pot over medium high heat, crumble in ground beef and cook, stirring occasionally until cooked through.
Drain fat from beef then transfer beef to a plate, set aside. Heat remaining 1 Tbsp olive oil in same pot.
Add onions, carrots, and celery and saute over medium-high heat until tender about 6 minutes, add garlic and saute 1 minute longer.
Add chicken broth, tomato sauce, water, canned tomatoes, sugar, basil, oregano, thyme, marjoram and cooked beef then season with salt and pepper to taste. (+onion powder and garlic powder)
Bring to a boil then reduce heat to medium-low, cover with lid and allow to simmer, stirring occasionally, until veggies are soft, about 15 - 20 minutes.
Meanwhile prepare ditalani pasta according to directions on package, cooking to al dente.
Add cooked and drained pasta to soup* along with kidney beans and great northern beans. Thin with a little more broth or water if desired.
Allow to cook 1 minute longer. Stir in parsley, serve warm with grated Romano or Parmesan cheese.

Hamburger (Ground Beef)Soup , great inexpensive soup, throw together, great winter soup. Whatever is in your cupboard, refrigerator. all your leftovers. I give you the basic broth, and you can add anything and everything. I added Macaroni, corn and gazebo beans. You can add potatoes, noodles, corn, french green beans, bag of mixed vegetables. Leftover in fridge throw it in, you will be surprised how wonderful it warms you up on a cold winters night. Ground Beef is so versatile.
Things you will need:
1 1/2 Pound Hamburger
8 Cups Water
2 (14.5)Cans Stewed Tomatoes
1 (8oz. ) Can Tomato Sauce
2 Cups Carrots (diced)
1 1/2 Cups Celery (diced)
1 Cup Onion
1 Green Pepper
1 Envelope onion soup mix
1 Tsp Italian Seasoning
2 Minced Garlic Cloves
1 Tbls Sugar
1 Tsp Oregano
1/2 Tsp Pepper
1 1/2 Cup Macaroni (not cooked)
1 Can (15 ounce) Garbanzo Beans
1 Can Corn
If Soup gets thick, thin with water or Beef Broth (I used Beef Broth)
