How To make Ham and Pea Spoonbread
NORMA WRENN NPXR56B:
1 c Plus 1 T yellow cornmeal
Divided 1 tb Sugar
3/4 ts Salt
1/4 ts Red pepper
3 c Milk
1 c SARGENTO Classic Surprme
Sharp Cheddar Cheese 2 tb Butter or margarine
3 Eggs; separated
1 c Diced cooked ham
15 oz Can LESUEUR Very Young Small
Early Peas, drained Grease a 12-x8-x2-inch baking dish; sprinkle bottom with 1 tablespoon cornmeal. Set aside. Combine remaining 1 cup cornmeal and next 3 ingredients; set aside. Bring milk to a boil in a large saucepan over medium heat. Gradually add cornmeal mixture, stirring constantly with a wire whisk until smooth. Cook until thickened, stirring constantly. Remove from heat; stir in cheese and butter until melted. Let cool slightly. Add egg yolks, beating until blended. Beat egg whites until stiff but not dry; fold into cornmeal mixture. Fold in ham and peas. Spread batter into prepared baking dish; bake at 350 degrees for 45 to 50 minutes or until puffed and brown. Serve immediately. Yield 6 to 8 servings. Cheese Croquettes from 1929! A Surprisingly Good Recipe from The New Delineator Recipes!
Let's delve into the cookbook I bought at a Library Book Sale and see what's inside! The previous owner of this cookbook stuffed it full of newspaper recipe clippings and even wrote some recipes of her own on the inside covers. I'll be showing you some of these clippings from the 40's and 50's plus we'll make some cheese croquettes and minty carrots and peas!
What you'll need:
Cheese Croquettes
3 T Fat (I used butter)
3 T Flour
2/3 c Milk
2 Egg Yolks
1/2 c Parmesan
1 c cubes of Mild Cheese
Paprika
Salt
Egg and Crumbs
Make a white sauce with the fat, flour and milk. Add eggs. Stir in cheeses and melt. Season with paprika and salt. Pour into shallow pan to cool. When firm, cut into any shape desired. Dip in crumbs then egg then crumbs again. Fry in hot grease.
Peas and Carrots
2 c cubed Carrots
1 c Peas
Butter
Sugar
Salt and Pepper
Fresh Mint
Boil carrots and peas till tender with fresh mint. Drain, add salt and pepper and butter. Sprinkle with sugar. Set in oven (I set mine to 350) and heat until sugar melts through. (I turned the oven off after a few minutes and left them in the oven to stay warm until the croquettes were done)

This side dish goes beautifully with just about anything, I love it so much that I can eat it all alone, hot, warm or cold. My whole family loves it and it’s one of the first dishes everyone goes to on the buffet table. I always prepare a double batch for thanksgiving and Christmas a d when I need a dish for a potluck, this is one of my favorites to take, and I always give out the recipe a few times, I know it by heart. This corn casserole is so easy to prepare and it’ll never let you down. I hope you give it a try. ❤️

INGREDIENTS _________________
1 stick of salted butter (melted)
1 14.5 oz. Can Creamed Corn
1 15.25 oz. Can whole kernel sweet corn (drained)
1 large egg
1 C. Sour cream
1/4 C. Chopped green onions (white n green parts)
1/2 tsp. Sugar
Pepper as needed (optional)
1 8.5 oz. Box Jiffy corn muffin mix
Non stick spray
TOPPER_________________________
Chopped green onions (as needed)
Freshly grated cheese of your choice as needed (i used mixed Sharp cheddar and Monterrey jack)
TIPS__________________________
1. You can double this recipe, if you do, add 2-4 eggs (I use 3)
2. You can replace Sour cream with Greek yogurt or Mayonnaise (you decide)
3. You can use fresh, frozen (thawed) or canned corn
4. Use an 8x8 dish or 9x13 if doubling the recipe)
5. For heat you can use finely chopped seedless jalapeño or can pickled jalapeño (drained)
6. You can add finely chopped bell pepper (green, red,orange or yellow)
7. Bake till no longer jiggly In the center
8. Bake single recipe for approximately 45 minutes
Double recipe needs to be checked at 45 minutes and baked Longer if necessary til no longer jiggly in the center
9. Using a metal pan make take less Time than glass
10. ALL THESE TIPS ARE SUGGESTED, but you decide if you want to follow these tips or not, the decision is yours.

2 cups of White Lily White Cornmeal Mix
1 cup buttermilk
1/3 cup water
1 cup cracklins
Mix ingredients together; put in preheated cast iron pan; cook at 450 degrees for 20 minutes or till done.
