Classic Cheddar Cheeseball
8 oz softened cream cheese
8 oz shredded cheddar cheese (2 cups)
2T mayonnaise
1T worcestershire sauce
1 garlic clove, minced
1/4 tsp cayenne
1/2 cup sliced almonds or pecans, toasted
Combine cheeses, mayo, worcestershire, garlic and cayenne in food processor until smooth. May also use mixer. Shape into ball with plastic wrap and chill for at least 3 hours. Roll in chopped nuts. Serve with crackers and veggies.
Bacon Ranch Cheese Ball
8 oz softened cream cheese
8 oz shredded cheddar cheese (2 cups)
2T mayonnaise
1 garlic clove, minced
3T chopped fresh parsley
3T chopped fresh cilantro or dill
1 tsp lemon juice
1/2 tsp onion powder
pinch sugar
6 slices of bacon, cooked crisp and chopped
Process cheese through sugar until well combined. Roll into ball and shape with plastic wrap. Chill for 3 hours. Roll in bacon crumbles, serve with crackers and veggies.

Betty's Spicy Ham and Cheese Ball
Betty demonstrates how to make a Spicy Ham and Cheese Ball. It is very easy to make, and it is great as an appetizer or for taking to a party.
Spicy Ham and Cheese Ball
(2) 8-oz. packages cream cheese, softened (I used the fat-free variety.)
about 3 oz. thinly-sliced cooked ham, chopped in small squares
¼ cup Italian salad dressing
¾ cup chopped pecans, spread in a single layer in a plate
crackers of various types, for serving
In a large bowl, combine (2) 8-oz. packages softened cream cheese, 3 ounces sliced ham (chopped), and ¼ cup Italian salad dressing. Stir until all ingredients are well-mixed. Cover with plastic wrap and chill at least 30 minutes—longer is better. Shape mixture into ball, using a large spoon and plastic wrap to cover your hands. Roll ball in ¾ cup chopped pecans. Serve with a variety of crackers. Enjoy! --Betty

Cheesy Country Ham Grit Balls

Ingredients
Canola oil, for frying
1/2 cup diced country ham
2 1/2 cups leftover cooked grits
1 cup grated smoked Gruyere cheese
1/2 cup all-purpose flour
1/2 teaspoon paprika
1/8 teaspoon cayenne pepper
3 large eggs, lightly beaten
1 cup panko breadcrumbs
Kosher salt
Directions
Fill a large Dutch oven two-thirds full with oil and heat over medium-high heat to 360 degrees F.
Add 2 tablespoons oil to a large heavy-bottomed skillet over medium-high heat. Add the ham and cook just until browned, 4 to 5 minutes. Remove with a slotted spoon to a large bowl. Add the grits and cheese to the bowl and stir until combined. Using wet hands, scoop 1/4 cup of the grit mixture, roll it into a ball and place on a platter or large plate. Repeat until all the grit mixture is used.
Whisk together the flour, paprika and cayenne in a shallow bowl. In a separate shallow bowl, add the eggs. Add the panko to another separate shallow bowl. Dip each grit ball into the flour mixture and shake to remove any excess before dipping into the eggs and then into the panko, spinning to coat completely.
Add the grit balls to the Dutch oven in batches, frying until brown on all sides, about 5 minutes. Remove to a sheet pan lined with a wire rack and immediately sprinkle with salt.

Ingredients for making a cheeseball:
1 package of cream cheese soften
1 cup of shredded marble cheese
1 cup of shredded old white cheddar
1 tsp onion powder
1 tsp garlic powder
1 tsp black pepper
1 cup of bacon bits
1/2 cup chopped green onions
Fresh parsley
Instructions for making a cheese ball:
- You’ll want to start with a package of cream cheese that’s room temperature so it will be easier to mix
- Loosely stir it with a fork just to break it up a bit then add shredded marble cheese, shredded old cheddar, onion powder, garlic powder, black pepper, bacon bits and chopped green onion
- Stir everything together by kind of mashing the other ingredients into the softened cream cheese with a fork
- This might take a little while but hey, it’s the only real effort you have to put into this recipe
- Now lay out a large piece of plastic wrap on your working surface
- Sprinkle more shredded cheese in the centre as well as some chopped, fresh parsley this will be the kind of crust on the outside of your cheeseball
- Once you have a fairly even layer, pour the cream cheese mixture as close to the centre as you can
- Use the plastic wrap to shape the cheese by pushing it together then rotating and pushing again until you have a ball shape
- Next tightly wrap your cheese ball in the plastic wrap, twisting the ends to ensure it holds it’s shape
- Refrigerate for at least 30 minutes or until you’re ready to serve with your favourite crackers, veggies or bread
