Ham & Cheese Brunch Bake | Delish
This breakfast casserole will wow your crowd.
DIRECTIONS
1. Preheat oven to 350 degrees. In a large bowl, whisk together eggs, milk, dijon, thyme, and garlic powder and season generously with salt and pepper.
2. Butter a large baking dish. Add bread and top with ham and cheddar. Pour over egg mixture.
3. Bake until eggs are cooked through and ham golden, 45 to 55 minutes. (To make ahead, cover baking dish with aluminum foil and refrigerate at least 4 hours and up to overnight, then bake as directed.)
4. Garnish with more thyme and serve.

10 large eggs
1 1/2 c. milk
2 tsp. Dijon mustard
2 tsp. fresh thyme leaves, plus more for garnish
1 tsp. garlic powder
kosher salt
Freshly ground black pepper
4 c. cubed French bread or baguette
1/2 lb. ham, chopped
1 1/2 c. shredded white Cheddar

Easy Cheesy Keto Egg Bake | Sausage, Ham & Cheese Brunch Casserole | One Pan Keto Breakfast
I made a quick skillet sausage & ham egg bake casserole for the family this weekend. This is a super easy keto or carnivore brunch perfectly paired with a side of bacon! This is a very versatile dish and you can change up the ingredients and layer in other toppings like bacon bits, mushrooms, peppers, etc. Also, if you don't have a cast iron, then just cook your meat in a separate pan on the stove, then pour into a buttered casserole dish and bake in that. I do love the cast iron though as it's so easy! Basic Sausage, Ham & Egg Skillet Recipe:
8 large eggs
1/2 C Half & Half (or HWC)
1/2 lb. ground pork sausage
1/2 C diced ham
1 diced green onion
1-2 T butter
1/2 C (or more) shredded cheddar cheese
Seasonings as desired: I used salt, pepper, parsley, onion powder & season salt
Directions:
Brown meat and other toppings in a cast iron skillet and add seasonings. in a separate bowl, whisk eggs, half & half, salt & pepper. Once meat is cooked through, add a tablespoon or two of butter to pan and stir around until melted. Remove pan from heat and add a layer of cheddar cheese. Pour the egg mixture over top. Bake uncovered at 350 for 30 minutes or until center is set. Let cool for 5-10 minutes before slicing.

Breakfast Egg, Ham and Hash Brown Casserole
12 large eggs
1 cup milk
1 teaspoon salt
½ teaspoon pepper
24 oz. frozen hash browns
16 oz. ham, diced
8 oz. cheddar cheese, (about 2 cups)
1 large green pepper, diced
1 small onion, diced
Preheat the oven to 350 degrees.
Spray 9x13 baking dish with cooking spray and set aside.
In a large bowl, whisk together the eggs, milk, salt and pepper and set aside. In a separate bowl, toss together the hash browns, ham, cheese, bell pepper and onion. Transfer the hash brown mixture to the prepared baking dish, pour the egg mixture over the top. The egg mixture should soak down into the dish. Make sure eggs and hash browns are evenly distributed in the pan.
Bake uncovered for 50-60 minutes until the center is set and the edges are brown.
I came across this recipe many years ago and it is great to prepare for a large gathering if you are serving brunch. The flavors are delicious. I have even prepared the night before and then baked the following day. I hope you would consider making it for your family.

HAM AND CHEESE BREAKFAST CASSEROLE is our favorite make ahead breakfast for any special occasion. This easy breakfast casserole with ham, cheese, bread, eggs, herbs, and more is just so delicious! This cheesy ham and egg casserole is sure to please everyone and it’s just so easy to make!

4 cups day-old, challah or brioche bread, cut into 1-inch cubes.
2 tablespoons olive oil
1 tablespoon unsalted butter
1 medium sweet yellow onion peeled and diced
½ teaspoon kosher salt
½ teaspoon freshly ground black pepper
¼ teaspoon granulated sugar
½ lb. thinly-sliced good deli ham roughly cut
6 large eggs
1½ cups milk or half ‘n half
½ teaspoon dry mustard
¼ teaspoon grated nutmeg
2 teaspoons fresh thyme leaves minced

1 cup shredded Gruyere or Swiss cheese

INSTRUCTIONS
Spray an 8-inch baking dish (1½-2 qt) with non-stick cooking spray.
Spread the cubed bread in the bottom of the dish.
Heat oil and butter in a large skillet over medium-low heat. Add diced onion, salt, black pepper and sugar. Sauté until onions are lightly caramelized, approximately 10 minutes. Be careful not to burn the onion.
In a medium bowl, whisk together the eggs, half and half, dry mustard, nutmeg, thyme, salt and pepper.
Spread the ham over the bread cubes, then spread the onion mixture on top of the ham. Layer on the Gruyere or Swiss cheese then pour the egg mixture over the cheese.
Press down gently on the top to ensure all bread cubes get soaked with the egg mixture. Cover and refrigerate overnight.
Before baking, warm the casserole on the counter for 15 minutes and preheat the oven to 350 degrees F.
Bake, uncovered, 40-50 minutes or until center is set and edges are bubbly and top begins to brown. A knife inserted in the center should come out clean.
If casserole is browning too soon, loosely cover it with foil near the end of the cooking time.
The casserole is delicious served any meal.
