Hello folks!
Tonight for tea we had this amazing creamy potato & ham soup! Not only was the super easy - it was absolutely delicious! Like a big hug in a bowl :) Perfect on it’s own but especially good with some crusty bread on the side. This is such a filling soup and the recipe goes a long way.

What I used - Serves 4-5 people
2 lbs (32 oz) Potatoes - washed and diced
1 Large stalk of celery - diced
1 Medium onion - diced
200g (7 oz) Sliced/diced carrots
700ml (25 oz) Chicken broth/stock
1 Teaspoon mustard - I used English mustard but Dijon would be perfect.
1 Teaspoon garlic powder
1 Teaspoon salt
1 Teaspoon smoked paprika powder
1⁄2 Teaspoon freshly ground pepper
1⁄4 Teaspoon ground nutmeg
2-3 Bay leaves
200ml (7 oz) Double/heavy cream
2 Tablespoons cornflour/cornstarch
100ml (3.5 oz) Sour cream
400g (14 oz) Cooked ham
A handful of fresh parsley - chopped

✅Ingredients
• 1/4 cup butter
• 3 tablespoons flour
• 1 small white onion diced
• 3 cups chicken broth
• 2 cups yukon gold or red potatoes peeled and cubed
• 4 cups frozen corn
• 2 tablespoons sugar
• 2 teaspoons salt
• 1/4 teaspoon white pepper
• 1 1/2 cups heavy cream
• 1 1/2 cups milk
• 1/2 pound bacon cooked and crumbled (optional)

1️⃣ 00:00:16 - Melt the butter in a large saucepan over medium high heat. The entire soup will be made in this pot so make sure it is big enough.
2️⃣ 00:00:21 - Add in the onions and saute for about 5 to 7 minutes.
3️⃣ 00:00:30 - Stir in the flour until a paste forms and cook 1 to 2 minutes. Some of the onions will mix into the paste and that is fine. You just don't want any visible, stray white flour.
4️⃣ 00:00:41 - Whisk in the chicken stock until smooth and bring to a boil. Add in the potatoes, corn, sugar, salt and pepper. Cover and simmer until the potatoes are tender, about 15-20 minutes (cooking time will depend on how large you cut your potatoes).
5️⃣ 00:01:32 - When the potatoes are tender, add in the milk and cream and stir to combine. Bring to a boil and simmer for another 5 minutes. Taste and season with additional salt and white pepper as desired. Serve hot topped with crumbled bacon (optional).

Creamy Corn Chowder
AMAZING Crockpot dinner!! This is a new favorite in our house and will be a repeat dish for us during the fall/winter. Very creamy! I make a pan of cornbread and we poured some of the chowder over cornbread....WOW...a must try! Let me know if you make it for your family :)

Here is how to make it:
Ingredients
6-8 potatoes (peeled and diced)
1 Can cream corn
1 Can whole kernel corn
2 Cups chicken broth
8 Ounces diced ham
1 Cups diced onions
1/4 Cups butter
2 Cups half and half
Directions
Step One
Place potatoes, both cans of corn, chicken broth, ham, and onions into the slow cooker.
Step Two
Cook on low for 7-8 hours.
Step Three
Mash the mixture to your desired consistency and then add the butter and half and half.
Step Four
Cook for an additional 30 minutes on high, and you are set!

Who doesn't love a quick and easy crockpot meal? As a busy mom I tend to make a lot of meals in my slow cooker. This one is great because it packs a ton of veggies and you can easily add or remove ingredients to customize the meal to your liking.
Ingredients
• 4 slices bacon, diced
• 1 pound boneless, skinless chicken thighs, cut into 1-inch chunks
• 12 ounces red potato, diced
• 1 onion, diced
• 3 carrots, peeled and diced
• 2 stalks celery, diced
• 2 cups corn kernels, frozen, canned or roasted
• 2 cups chicken broth
• 2 cups milk
• 3 cloves garlic, minced
• 1/2 teaspoon dried thyme
• 1/2 teaspoon dried oregano
• Pinch of cayenne pepper
• 1 bay leaf
• Kosher salt and freshly ground black pepper, to taste
• 1/2 cup half and half
• 2 tablespoons cornstarch
• 2 tablespoons unsalted butter
• 2 tablespoons chopped fresh chives
Instructions
• Heat a large skillet over medium high heat. Add bacon and cook until brown and crispy, about 6-8 minutes. Transfer to a paper towel-lined plate; set aside.
• Place chicken, potatoes, onion, carrots, celery, and corn into a 6-qt slow cooker. Stir in chicken broth, milk, garlic, thyme, oregano, cayenne pepper and bay leaf; season with salt and pepper, to taste.
• Cover and cook on low heat for 7-8 hours or high heat for 3-4 hours.
• In a small bowl, whisk together half and half and cornstarch. Stir in half and half mixture and butter during the last 30 minutes of cooking time.
• Serve immediately, topped with bacon and garnished with chives, if desired.
