INGREDIENTS:
6-8 slices of bacon, sliced
1 medium onion, diced
3-4 celery ribs, diced
3 cups corn (fresh, canned, or frozen)
4 tbsp unsalted butter
3 large potatoes, peeled and diced
1/2 tsp garlic powder
1/2 tsp dried thyme
1/2 cup flour
6 cups chicken stock
2 bay leaves
1 cup heavy cream
1 cup milk
1 tsp chicken bouillon
Salt and pepper, as needed

What do you do with leftover ham that’s been in the freezer for a few months? Well, I turn it into a delicious Ham & Corn Chowder using the slow cooker for a fantastic meal that’s as easy to prepare as dumping everything in and turning it on.

1 Medium White Onion Chopped
2 lbs Frozen Whole Kernel Corn
1 ½ lbs Small Red Potatoes Quartered

In a small measuring cup, mix cornstarch and milk until smooth; stir into soup. Add corn, cook on medium heat 10 minutes, stirring occasionally...
Ingredients
4 Tbsp. butter
2 cups onions, chopped
1/2 celery, chopped
1 cup red bell pepper
4 garlic cloves, minced
1 Tbsp. Creole seasoning
1/2 tsp. kosher salt
1/4 tsp. pepper
1-1/2 lbs. Yukon potatoes, cubed
4 cups ham, cubed
3 cups chicken stock
2 Tbsp. cornstarch
2 cups whole milk
2 cups cheddar Jack cheese, shredded
1 cup sour cream
3 Tbsp. fresh parsley, chopped
Directions
In a pot melt butter on medium high, add onions, celery, and bell pepper cooking 3-5 minutes until tender. Stir in garlic, Creole seasoning, salt, pepper, potatoes, and ham and cook for 2 minutes. Pour in stock, bring to a boil, reduce heat to medium and cook for 10 minutes.
In a small measuring cup, mix cornstarch and milk until smooth; stir into soup. Add corn, cook on medium heat 10 minutes, stirring occasionally. Stir in cheese, sour cream and parsley until cheese is melted. Serve with French bread or crackers.

This is my perfect chilly weather chowder, loaded with flavor and super hearty, it's perfect for anytime of the year...you can serve it with any bread of your choice as well as any side dish, it'll be a big hit in your home when serving your family or guests.
7 thick slices of bacon (chopped)
1 small/medium chopped onion
4 green onions (white and green)
3 large celery ribs (chopped)
5 medium carrots (chopped)
4 large garlic cloves (minced)
1/2 tsp fresh thyme leaves
1 tsp ground thyme
1/3 C. all purpose flour
32.oz chicken broth
3 1/2 C. milk
2 medium potatoes (small cubes)
1/2 lb. ham (small cubes)
5 ears of corn (corn cut off cob)
Italian parsley for garnish
pepper (to your liking)
salt (to your liking)

Any Kind of Chowder can be made from this recipe because the meat is added last. So if you want to make Clam or Seafood Chowder, just swap out the flavor of broth with Clam or Seafood broth and add the meat you prefer. It's that easy. But, since this is a Chicken and Corn based recipe, I decided to make it a little hardier with the addition of a few other vegetables, including potato, carrot and peas. This is a thick chowder so, for those that like stews, you're going to love the warmth each bite brings because comfort food doesn't get any better than this. Especially, when it's cold outside.
