Motsiyas | Chamorro Recipe
MOTSIYAS (pronounced mot-see-jas) is a traditional Chamorro delicacy from Guam. Often described as Chicken Sausage. A mixture of chopped chicken, with lots of leafy greens like spinach, and pumpkin tips. Which also includes onions, hot peppers, lemon juice, coconut milk with an array of seasonings and herbs such as mint, pepper leaves, tomato leaves etc....
Enjoy this stove top version with a modern method of steamed chicken mixture wrapped in foil.

Chicken Kelaquen Recipe | Guamanian Style Food
This is a dish I had growing up in Guam and is simply killer. You can make it with other proteins but I have always used chicken.
Ingredients
About 9-10 boneless/skinless chicken thighs
1 coconut grated
about 10 chili peppers or 2 -3 habeneros
green onions
about 6 lemons juiced
salt to taste.
Fina Denne Sauce
2/3 cup soy sauce
1/2 cup vinegar
1/4 white onions, diced (green onions or red onions are optional)
4 peppers (donne'), dinache optional

Chagi | Corn Soup
Ingredients
•2 tbsp. Olive oil
•1/2 Onion, chopped
•5 pcs. Chicken thighs, chopped
•1 1/2 tsp. Salt
•1 tsp. Black Pepper
•8 cups Water
•5 cups Sweet corn kernels, frozen
•1/2 cup Corn starch
•1/2 cup Water
•1 can Coconut milk
•Green onions, chopped for garnish
Directions
In a medium sized pot, sauté onions in olive oil over medium high heat until onions become translucent.
Add chicken, salt, and black pepper to the pot. Cooked until chicken is cooked through.
Once chicken is cooked, add water and bring to a boil. Then, add corn kernels to the pot and cook for about 15 minutes while frequently stirring.
Combine corn starch and water in a small bowl. Mix well before adding mixture to the pot. Add mixture to the pot and throughly stir to combine.
Turn off heat and add coconut milk. Stir to combine.
Serve with green onions. Enjoy.

this recipe how to make chicken kelaguen are very popular here in Guam and also their original recipe with coconut!!! so for todays video i make my own chicken kelaguen at home since i have coconut but i use roasted chicken that i bought from our super market that has been cook already mostly they do bar-bq the chicken for my own VERSION AND convenient or can you do also just buy the fully cook roasted chickens . see our ingredients down below
INGREDIENTS
roasted chicken ( left over )
1/2 green onion chop
3 tbsp. lemon powder or you can adjust the measurement
6 tbsp. grated coconut
3 tbsp chops red chili pepper
1 whole lemon to squeez
salt and pepper to taste

Chagi | Chunky Chicken Chalakilis
Ingredients
•2 cups Rice, uncooked
•2 tablespoons Vegetable oil
•1 medium Onion, chopped
•1 tablespoon Garlic, chopped
•3 lbs. Boneless chicken, chopped
•½ teaspoon Black pepper
•13 cups Water
•1 packet Achote powder
•3 cubes Chicken bouillon
Directions
Pre-heat oven at 350°F.
Place uncooked rice on a baking sheet and toast in the oven for 7-8 minutes or until golden brown.*
In a pot, sauté onions and garlic in oil until onions become translucent. Mix in chicken and black pepper. Cook over medium heat until chicken is no longer pink.
Add rice, achote powder, and water to the pot. Stir and bring to a boil.
Add bouillon cubes to mixture.*
Stir occasionally until desired consistency.
Remove from heat and enjoy!
*Ground rice if preferred.
*Mash mixture while stirring if you choose not to grind rice.

3 packages rapid rise yeast, also called instant yeast
1 1/4 cup warm water, between 105 to 110 degrees Fahrenheit
3 tablespoons vegetable or extra virgin olive oil (I prefer EVOO)
2/3 cups + 2 tablespoons granulated sugar
1 teaspoon salt

3 1/2 cups all-purpose flour
Tools: large bowl, plastic wrap, wax paper, steamer
CHICKEN FILLING *using COOKED chicken; you will need 4 batches of dough for this filling

8 cups cooked, shredded chicken
1 cup diced onions
1 cup Mr. Yoshida's sauce
2 tablespoons brown sugar
1 teaspoon garlic powder
1/2 teaspoon black pepper
1 tablespoon vegetable oil
