Easy Red Salsa Recipe - Salsa Roja de Chile Arbol
Here is an easy recipe for salsa roja using dried chiles. It reminds me of a taqueria style salsa that goes great with tacos.
INGREDIENTS
4 chile arbol
2 chile pasilla
2 cloves garlic
1/4 of an onion
1 roma tomato
fresh cilantro
salt to taste

This red chile sauce has been one of my most requested recipes and I'm sharing with you my version of our family recipe.

This red chile sauce is so versatile, so delicious, and so easy to make. This sauce is awesome because at its base, it can be used on so many different dishes, from enchiladas to tamales to menudo and so much more. All you got to do is start with this base, and then you can tweak it in any direction, probably as many different sauces as there are chilies, and that's not even taking into account that every single house is going to do it a little bit different.
So whether you're in Texas, New Mexico, Mexico, or along the frontera or anywhere in the USA, remember my advice, what Arnie takes always says, ain't no right way, ain't no wrong way to make chili sauce, and don't let nobody tell you you can't do it the way you like it.
Maybe what your grandma taught your mom, what my grandma taught my mom and my mom taught me may not be exactly the same, even if they're similar, but of course, my grandma's is better than yours. Just kidding! Don't get mad!
Let me just cover real quickly the couple of the different chiles I have. Now, the package here says cascabel or guajillo. It doesn't mean they're the same thing because they're not, but it means you might get one or the other in this package or possibly both. We also have some ancho chile, and we also have some pasilla chile. And I also have some chile de arbol down here. We use that one in our red chili sauce just to give it a little hint of heat and a little more complex flavor.
All right, so in the recipe we're going to use 15 guajillo/cascabel chiles, a couple of ancho chiles, and probably about four or five of the chile de arbol, a whole onion, and six cloves of garlic. All right, friend, let's get started and make this amazing red chili sauce.

If you’ve cooked with us before, you should have all the main ingredients: dried Guajillo and Ancho peppers. Before we start, just want to mention, we added a little something extra for this episode! We wanted to share how we make mexican rice as an excellent side dish to this guisado (stew). Enjoy!
Ingredients:
1 cup of rice
1 Tomato
1 onion (1/2 for the rice and 1/2 for the meat)
Tomato seasoning
Chicken broth seasoning
1lb meat
10 Guajillo Chilis
2 Ancho Chilis
Garlic salt

1 gallon salsa & Crispy Chips Recipe-
Salsa Roja and crispy corn chips secret recipe-
Ingredients
Boiled Salsa Roja (2:45)
Water for boiling (enough to cover tomatoes & chili)
3 Roma tomatoes
1 Jalapeño or serrano pepper
Small bunch of cilantro (20 stems)
1/2 tbsp salt (Himalayan salt)
Juice of half lime (1 tbsp)
-Adjust citrus and salt to taste after blending
Fresh Salsa Roja (5:07)
3 Roma tomatoes
1 Jalapeño or Serrano pepper (adjust depending on spice level of pepper)
Small bunch cilantro (10 stems)
1 tsp salt (Himalayan salt)
-Adjust citrus and salt to taste after blending
Roasted Salsa Roja (8:07)
3 Roma tomatoes+ 1 ripe vine tomato
1 Jalapeño or serrano pepper
Small bunch cilantro (20 stems)
1/2 Tbsp salt (Himalayan salt)
3 garlic cloves
1/4 medium onion
Juice of 1 lemon
-Adjust citrus and salt to taste after blending
-If you are using regular table salt use half suggested amount of salt
-if you have access to key limes you will have a better citrus flavor to your salsas
-salsa will last 5-7 days refrigerated in a tightly sealed container
-If you add onion to your salsa it will last 4 to 5 days in the refrigerator

Rick Bayless Seared Beef Tips with Guajillo Chile Sauce & Caramelized Onions

It's true I'm prone to occasional hyperbole but I really do think this is one of Mexico’s most iconic flavors. Nowhere else in the world makes a chile sauce like this—focused, balanced, pure rusty-red goodness with a gentle glowing heat. This is related to a northern Mexican dish called carne con chile colorado, though that dish uses the colorado chile (similar to New Mexican chiles), which has a less robust flavor. And here, I’ve enveloped seared cubes of steak in that beautiful sauce, rather than use less-tender cuts that need a long braise in it. The sweet crunch of the caramelized onion offers the perfect counterpoint to vibrant red chile and savory seared beef.
