Guacamole lovers, you will love this delicious version of a classic recipe. All I can say is MORE Avocado!

Guacamole
1 Garlic Clove
Big Handful of Cilantro
1-2 Serrano Peppers (depending on your heat tolerance)
1 Green Onions or 2 tbsp of White Onions
3-5 Cherry Tomatoes
3 Large Avacados or 4-5 Small Ones
Half Most of them, safe one or two halves, cross cut them and save them for the MIX.
1 Lime
Salt (and Pepper)
This guacamole will be made in a Mocojete. A traditional lava rock bowl that is pourouse and great for grinding out the flavors from the ingredients that just chopping can’t do. You can get these at local mexican grocery stores or online.
(make sure you don’t get a fake one made from concrete)
You can always use a regular mortar and pestle… not the same but will work.
If you don’t have either…. You can drag your knife across the first ingredients with salt to create the paste….
Ok, let’s get into this Guacamole!!!
This guac is split into three parts…..
The Paste
The Mash
And The Mix
For the paste you will add, your garlic clove, Half the cilantro, Most of your serrano Pepper diced up, Half your green onion, and sprinkle on some salt over that (the more course your salt here the better to help with the paste).
Add all the ingredients, and smash it until its a paste.
Then for the Mash, you will add your half sliced avocado’s (except the crosscut sections), any leftover ingredients (cilantro, tomato, onions, Serano), squeeze of lime juice, salt and pepper. Using the tejolote or potato masher, MASH all the ingredients to the desired consistency.
Lastly, go ahead and add the crosscut avocado into the bowl, give another squeeze of Lime and just MIX. No mashing of your guacamole at this point, you just want to incorporate the chunks of avocado into it.
