2 lb Large shrimp 1/4 c Fresh parsley 1 c Olive oil 1 T Oregano 4 T Lemon juice 1 T Chopped garlic 4 x Drops hot sauce 1 t Salt 1 T Tomato paste Pepper to taste Combine all ingredients in a glass dish. Garlic and Chilli Butterflied Prawns
Nothing signals the warm, relaxed days of a Tasmanian summer quite like prawns cooked on the barbecue. Enjoy these with a salad or just as they are. How long will it take? 2 hours What’s the serving size? Serves 4 What do I need? 1 head garlic, cloves peeled 3 large sweet chillies, seeds removed 1 birdseye chilli, seeds removed 100 ml extra virgin olive oil Salt and freshly ground black pepper 16 king green prawns 1 cup flat leaf parsley, finely chopped Zest (finely grated) and juice of 1 lemon How do I make it? Preheat oven to 180C. In a small roasting dish place garlic, chillies and olive oil and cook until the garlic is very tender and the chillies have blackened, approx. 15 – 20 minutes. Remove from oven, cool completely and then blitz in a food processor. To butterfly the prawns, use a serrated knife to slice through the back of the prawns from the head to tail. Remove the vein and open the prawns to lay flat. Preheat grill pan or barbecue to high. Place garlic, chilli and oil mixture into a bowl and add parsley and a pinch of salt and pepper. Toss to combine. Brush prawns with chilli mix and cook flesh-side down for 1-2 minutes until red and lightly charred. Turn and continue cooking until cooked through. Remove from heat and sprinkle with lemon zest. Squeeze over lemon juice and serve immediately.
- Clean and devein the prawns/shrimp. Leave the tail on. - Whisk together all the items for the marinade in a bowl. - Marinate the prawns/shrimp with this marinade for around an hour. - Add all the items for the Dipping Sauce in a small bowl. Whisk and set aside.
Process:
- Preheat a Grill pan - Brush it with olive oil. - Now place the marinated prawns/shrimp side by side to not crowd the pan. - Grill on medium heat for 2 mins . - Flip the shrimp pieces to grill on the other side on medium heat for another 2 mins. Now baste with the oil on the pan on this side. - Grill on each side for another 1 min, basting with the oil left on the pan this time. - Serve hot with the Dipping Sauce & a dash of lime if required.
The most beautiful skewered prawns, wrapped in smokey bacon and accompanied by a feta and watermelon salad, a combo that with change your BBQ game forever.
