How To make Grilled Salmon Sandwich
4 Salmon fillet, 3 oz;
-skinned 1/2 ts Tarragon, dried; crushed
1/4 ts Salt
1/8 ts Pepper, black
2 ts Olive oil
2 Garlic clove; minced
1/4 c Chicken broth
1 tb Sweet pickle relish
2 ts Lemon juice
1 pn Cayenne
1 1/2 c Boston lettuce leaves
1/2 c Plum tomatoes; sliced
4 sl Pumpernickel; 1 oz
Spray indoor ridged grill with nonstick cooking spray; heat over medium heat. Or, prepare outdoor grill according to manufacturer's directions. Sprinkle salmon on both sides with tarragon, salt and black pepper. Grill 5 minutes on each side, until fish is cooked through. Meanwhile, to prepare sauce, in small nonstick skillet, heat oil. Add garlic; cook, stirring constantly, 2 minutes. Stir in broth, relish, lemon juice and red pepper; cook, stirring frequently, 2-3 minutes, until sauce boils and reduces slightly. Remove from heat. To assemble sandwich, divide lettuce and tomato evenly over bread. Place salmon on top and drizzle evenly with sauce.

Smoked Salmon Grilled Cheese | Chef Eric Recipe
Some would say if you added anything to a grilled cheese, besides cheese, bread and butter, it automatically becomes a “melt”, while others would still classify it as a souped-up grilled cheese. I contend that either way…. It’s simply delicious and has the power to transport you to your 8-year-old self!!!

Smoked Salmon Grilled Cheese
4 Slices Bread (for 2 Sandwiches)
4 Tbsp Butter, Unsalted
1 Cup Cheddar, Shredded by Hand
1 Cup Munster Cheese, Shredded by Hand
1 tsp Salt
1 tsp Black Pepper
4 slices Kvarøy Arctic Smoked Salmon
Method:
1. Stabilize your grill at 450F and install a cast iron griddle or soapstone surface at the highest setting of the Divide and Conquer system and allow it to come to temperature.
2. While the grill is coming to temperature, shred and mix the cheeses and season with salt and pepper. Slice your bread into ¼” to ½” slices.
3. Draw the butter across the cooking surface and place the bread slices on top of the melting butter so the bread can absorb the butter. Close the dome and allow the natural lump charcoal flavor to begin to set in.
4. After 1 minute, melt more butter and flip the bread on top, then immediately top each slice of flipped bread with ½ cup of the shredded and seasoned cheese. Top each slice of bread with one slice of smoked salmon and close the dome for 1 to 2 minutes.
5. Open the dome and create sandwiches by flipping one slice on top of another. Do this twice, creating 2 separate sandwiches. Add more butter to the cooking surface and flip the sandwich one more time.
6. Remove the grilled cheese sandwiches from the grill, slice in half and enjoy!!!
