3 Simple Marinades to Add More Flavor to Salmon
Marinades are an effortless way to add flavor to your favorite proteins. If you’re a meat eater, you’ve likely had marinated chicken, beef and pork at a restaurant, or made them at home, but what about seafood?
Just like meat, seafood, especially salmon, is the perfect canvas to experiment with flavor. Marinades are easy to throw together on the fly with ingredients you have on had, but if you’re looking for inspiration, or if fish frequents your weekly menu, these three simple marinade recipes from @ChefBillyParisi are sure to make a splash!
3 Simple Marinades
Serves 6
Ingredients
For the Garlic and Herb Marinade
2 Tbsp. fresh dill, chopped
1 garlic clove, finely minced
Juice of ½ lemon
¼ cup olive oil
Salt and pepper, to taste
12 oz. of salmon
For the Sweet Soy Marinade
3 Tbsp. light brown sugar
1 garlic clove, finely minced
2 tsp. fresh ginger, minced
2 Tbsp. sesame oil
1/3 cup soy sauce
12 oz. of salmon
For the Cilantro Lime Marinade
1 ½ Tbsp. Two Brothers blackened seasoning
3 Tbsp. fresh cilantro, chopped
Juice of 1 lime
¼ cup olive oil
Salt, to taste
12 oz. of salmon
Instructions
For any of the marinades above:
1. Add all of the ingredients for your marinade of choice, excluding the salmon, to a medium-size bowl and whisk to combine.
2. Transfer the salmon and marinade to a plastic Ziploc bag or container and marinate in the refrigerator for up to 2 days, or freeze for up to 3 months.

Shopping List:
2 5-6 oz salmon filets (Skin on or off based on your preference)
salt, pepper, garlic, onion powder, chili powder, cajun seasoning
1/2 lemon
thyme
2-3 tbsp butter
avocado oil
Sauce:
3 tbsp butter
1-2 tbsp flour
1 tbsp lobster base
1 tbsp garlic paste
2/3 cup low/no sodium chicken stock (more if needed to thin the sauce)
1/4 cup heavy cream
1/2 - 1 cup of parmesan cheese (Cheese will thicken the sauce a bit as well)
cajun seasoning (to taste)
Directions: Preheat oven to 400 degrees. Season salmon on both sides. Heat skillet and add high smoke point cooking oil. Add 1/2 lemon face down in the skillet (as seen in the video) - this is to add some flavor to the skillet and also for presentation. Sear Salmon 60-90 seconds per side or until you achieve the color you're looking for. Baste with butter and thyme and finish in the oven for 8-10 mins or until the salmon reaches 135 internal temp. Prepare the sauce by melting butter and adding lobster base, minced garlic, flour to your pot. Next whisk in chicken stock and heavy cream. Bring to a boil and reduce to a simmer. Remove from heat and mix in cheese - whisking to ensure sauce is smooth. Do not add seasoning until AFTER you've added the parmesan cheese. The lobster base and parmesan cheese contain sodium, so you may not need much additional salt. Always Season to taste. Serve with pasta, potatoes, and/or veggies.

THINGS YOU’LL NEED:
1/4 cup soy sauce
1/4 cup olive oil
3 tablespoons brown mustard, I use spicy brown mustard
2 tablespoons honey, or use brown sugar
2 tablespoons lemon juice, or juice from ½ lemon
1 serrano pepper, diced (or use even hotter peppers to really spice things up - optional, for extra spicy)
4 cloves garlic, minced
1 teaspoon dried oregano
Red pepper flakes to taste, around ¼ to 1 teaspoon
2 6-ounce salmon fillets
