How To make Grilled Portabellas
6 ea Whole portabella mushrooms
cleaned, stems removed :
VINAIGRETTE-------------------------------- 1/4 c Vinegar
3/4 c Olive oil
1 ts Sugar
1 ts Salt
1/4 ts Freshly ground black pepper
1 tb Balsamic vinegar
2 ts Lemon juice
Prepare vinaigrette: Combine all vinaigrette ingredients in a lidded jar. Shake well just before using. Lay clean mushrooms in a shallow baking dish and pour 1/2 cup of vinaigrette over it. Cover and marinate for up to 24 hours, turning the mushrooms once. When ready to cook, drain dressing; reserve for another purpose. TO GRILL: Place on grill over warm coals for 5 to 10 minutes, turning once. TO brOIL: Place on a baking sheet and set under broiler for 5 to 8 minutes. TO BAKE: Place baking dish in preheated 425 F oven for about 15 minutes. NOTE: You may substitute sliced portabellas. However, you may need to grill them on a piece of foil to avoid breakage. Portobello Mushrooms
Extra Virgin Olive Oil
Kosher Salt
Pepper
Oil the mushrooms.
Salt and pepper to taste.
Grill on BBQ medium direct flame for about 5 minutes per side starting with smooth side down.
Serve whole or sliced.

YIELD; 4 servings
PREP TIME; 10 minutes
TOTAL TIME: 20 minutes
INGREDIENTS
4 large portobello mushrooms caps
1 TSP sea salt or smoked salt
1 TSP garlic powder
¼ Cup vegan butter
2 tablespoon soy sauce
1 tablespoon liquid smoke
1 sprig of thyme
INSTRUCTIONS
Pull out stems from your portobello mushroom and set in the dish around caps. Use butter to marinate both sides of the mushroom. Flip the mushrooms over.
You can remove the black inside, but you do not have to. I like the flavor it adds.
Add soy sauce, liquid smoke, garlic powder, season salt, and thyme.
Heat the grill, stovetop or skillet until the oil sizzles, then add the seasoned portobello mushrooms. Let it cook for 5-7 minutes.
Flip the Portobellos and cook until desired (rare, medium, or well-done).
Remove from stove top, slice and serve.
