How To make Grilled Mussels with Hot Fish Sauce
2 lb Fresh mussels
1 Lemon Grind to paste
-or 1t powder 3 tb Fish sauce Nuc-Mam
Vietnamese (or Thai) 1 ts Sugar
2 Dried hot red pepper
2 Cloves garlic
2 tb Water
1. Clean and scrub the mussels as shown in class.
2. While mussels are draining, prepare sauce: Blend garlic and red peppers
into a paste. Add juice of 1 lemon, 3 tb fish sauce, 1 tb sugar, and finally, 2 tb water.
3. Preheat broiler.
4. Place clean, dry mussels in a single layer on a baking sheet.
5. Broil mussels just until they are all open and aromatic.
6. Remove from broiler and serve with rice. Dip mussels into sauce to eat.

STIR FRIED MUSSELS WITH ROASTED CHILI PASTE AND THAI BASIL
INGREDIENTS:
2 lbs Cooked mussels
12 fresh thai chilies, or according to taste
4 Cloves garlic
1 small shallot, sliced
1/4 cup Water
2 tbsp veg. oil
A handful of thai sweet basil
SEASONING INGREDIENTS :
1-1/2 tbsp Oyster sauce
1 tbsp Seasoning soy sauce
1 tbsp Roasted chili paste (Prik pao)
1 tbsp Fish sauce
1 tsp MSG
Serve with Jasmine rice.

salt for boil

1 tbsp. gochujang chilli paste
2-3 tbsp white wine
salt to taste
black pepper
half lemon juice
red chilli optional
chopped parsley
chopped spring onion
30 grams butter
2 tbsp olive oil.

Mussels in Thai Ginger Broth...this is one of those dishes that you'll want to make over and over again. Fragrant ginger and garlic are blended into a flavorful paste along with lemongrass, kaffir lime leaves, lime juice, a hit of fish and soy sauce and spicy bird eye chilis. When that paste hits the heat, your entire kitchen will transport you to the scents and flavors of Thailand. Creamy coconut milk adds a silkiness and perfectly steamed mussels finish off this fast and easy meal. Served with some crusty bread to sop up as much of that tasy ginger broth as possilbe makes this the PERFECT summer night meal.

Seafood Dipping Sauce also known as Nam Jim Seafood, is amazing on seafood but goes great on just about anything. It's spicy, garlicy, sour, savory, and a little sweet. Packed with herbaceous flavors from the crushed ingredients. I used to drizzle this sauce on rice and eat it on its own with some crisp cucumbers. So good!
