For this spicy mussels sauce you'll need...
2-3 lbs mussels
2 tablespoon olive oil
2 cloves garlic
3-4 shallots
2 tablespoon parsley
10-14 basil leaves
2 tablespoon tomato paste (concentrated tomato puree)
1 tablespoon lemon juice
1 can whole tomatoes
1 cup tomato sauce (passata)
1/3 teaspoon black pepper
1 spicy chili pepper (or pepper flakes)
1/2 teaspoon salt (adjust)
1 heaping tablespoon brown sugar
1 cup white wine (your fav)

❂ Ingredients:
500g. Fresh mussels
Olive oil
150ml White wine
1 Shallot onion
50g. Unsalted butter
1/2 Serrano pepper
1 Branch of cherry tomatoes
2 Gloves of garlic
Fresh parsley
1/2 Lemon zest
Salt and black pepper to taste
❂ Cooking process:
- Preparation: Clean the mussels by scrubbing and removing the beard. Discard any open ones that don’t close when tapped.
- Sauté: In a large skillet over medium heat with olive oil add the shallot onion, minced garlic and saute until aromatic. Then add serrano pepper, cherry tomatoes and melt butter.
- Simmer: Pour in the white wine and bring it to a gentle simmer.
- Cook the Mussels: Add the mussels to the skillet. Grate lemon zest on top. Cover and let them steam for 5-7 minutes or until they’ve opened up. Discard any that don’t open.
- Flavor: Sprinkle with chopped fresh parsley. Season with salt and black pepper to your liking.
- Serve: Transfer to a serving bowl, drizzle with some sauce from the skillet, and garnish with additional parsley if desired.
