How to cook a filet mignon (FOOL PROOF)
Filet mignons have a bad reputation. They are the most expensive cut on the cow despite being lean. Due to the lack of fat, they are less flavorful than something like a ribeye or NY strip.
Despite this, I think they serve an important purpose. When introducing someone new to the world of steaks, filet is a great place to start! They are extremely tender, and while not always the most flavorful, they are always a crowd pleaser. This is my favorite way to cook one indoors!

In today's video, let's see how to make restaurant style grilled fish, on a grill pan. You will not need any tandoor setup or oven to make this.
Ingredients:
Boneless Fish Fillet - 250 gms
Turmeric Powder - 1/4 tsp
Red Chilli Powder - 1 tsp
Fennel Powder - 1/2 tsp
Black Pepper Powder - 1/2 tsp
Lemon Juice - from 1/2 lemon
Ginger Garlic Paste - 1 tsp
Rice Powder - 2 to 3 tsp
Chopped Curry Leaves - 10 to 15
Chopped Coriander Leaves - handful
Vegetable Oil - 1 tbsp
Egg - 1
Oil - to grill the fish
Some fresh vegetables for the salad
Preparation:
Wash the fish fillet and cut it into slices. You will get around 8 slices from 250 gms of boneless fish.
To prepare the marination -
Into a bowl, add turmeric powder, red chilli powder, salt, fennel powder, black pepper powder, ginger garlic paste, rice powder/flour and mix.Beat an egg and add to this. Also add juice from half lemon and mix. Add in freshly chopped curry leaves and coriander leaves. Add in some vegetable oil.
Mix everything really well and coat the fish slices with this masala.
Refrigerate for at least 2 hour or overnight.
Heat a grill pan and pour some vegetable oil. You can also use olive oil.
Place the fish slices one by one and grill the fish between low and medium heat.
Once the fish turns crisp and golden brown, flip them and fry the other side as well.
Once done, transfer onto a kitchen towel to get rid of the excess oil.
In the same pan, grill the vegetables of your choice. Cut the vegetables into long strips and saute them for couple of minutes. I have used carrots, green capsicum, onion and tomatoes.
You need to still retain the crunchiness and not overcook these vegetables.
The Restaurant Style Grilled Fish is now ready to be served along with the salted vegetables.

However, avoid overcooking them to keep the meat intact and moist instead of having it fall apart. Ingredients
⅓ cup fresh dill, minced
¼ cup fresh lemon juice
2 tbsp olive oil
4 tsp Dijon mustard
¼ tsp sea salt
¼ tsp granulated sugar
¼ tsp ground black pepper
1 garlic clove minced
20 oz pollock fillets, thawed if necessary
Cooking spray

0:08 Mix together dijon mustard, black pepper, olive oil, garlic, sea salt, sugar, dill, and lemon juice in a bowl.
0:52 Brush the marinade all over the pollock fillet
1:06 Seal the container & transfer to a child area
1:13 Allow fish to marinate for about 20 minutes. Preheat the grill
1:22 When done, drain the pollock fillets and excess the marinade.
1:29 Prepare grill and coat grill rack with cooking spray.
1:31 Put fish on the grill rack and cook for 4 minutes on each side or until the fish flakes fall off easily with a fork.
1:53 Serve with fresh dill and lemon wedges.
