Som tum salad ???? #shorts
Ingredients per portion
- 120g shredded green papaya
- 2 cloves garlic
- 1-2 birds eye chillies
- 30g palm sugar
- Juice of 2 limes
- 6 baby plum (or cherry) tomatoes
- 2 tbsp dried baby shrimp
- 2 tbsp dry roasted peanuts
- 4 snake beans, cut into 2cm pieces (if you can't get snake beans, you can use green beans but blanch them in boiling water for 1 min)
- 2 tbsp fish sauce
Method
1. Start by pounding together the garlic, palm sugar, lime juice and chilli in a mortar and pestle. You can also add the lime rinds but make sure you take them out before you eat the salad - what this does is release the oils from the lime skin.
2. Next, add the tomatoes and half of the dried shrimp and peanuts, and pound again for 1 minute.
3. Add the snake beans and pound.
4. Add the green papaya and fish sauce and pound one last time to make sure everything is well covered with the dressing.
5. Serve as a side or with some sticky rice as an excellent summer lunch or dinner.
