Stir fry vegetables with tofu is quick and easy to prepare at the same time a healthy recipe.
Serve it while it's hot and best partnered with freshly-steamed rice.
Ingredients:
Ingredients for mixed sauce:
30g oyster sauce
1 tbsp soy sauce
1/2 tsp ground pepper
4 tbsp water
1 tsp of cornstarch
1/2 tsp sesame oil
for sauteeing:
4 cloves garlic
1 medium-sized onion
75g carrots
75g green beans
75g snow peas
40g wood ear mushrooms or tenga ng daga
mixed sauce
500g fried tofu
75g or 1 medium-sized red bell pepper

1 packet (16 ounces) firm tofu OR silken tofu, drained
Kosher salt
Neutral oil
1 shallot, sliced thinly cross-wise
3 cloves garlic, sliced thinly length-wise
1/2 Thai red chile or similar, sliced thinly
2 scallions, cut into 2-inch segments, making sure white and green parts are separated
2 tablespoons light soy sauce
2 teaspoons abalone sauce
1 teaspoon rice wine (Mijiu or Shaoxing wine)
1/2 teaspoon granulated sugar
1/2 teaspoon MSG or mushroom powder

At its most basic, shiraae is made with sesame seeds, soy sauce, and tofu. This forms a rich and creamy base that is nutty, savory, and serves as the base flavor for the vegetables you have in season.

There are many variations and things you can add to your shiraae base, but two of the more common call for dashi stock and miso paste.
As far as the ingredients, I prefer a combo of spinach, shirataki noodles and carrots or green beans like in this recipe!
I used to prefer shiraae cold, but after being impatient and not allowing the vegetables to cool, eating it slightly warm grew on me. Perhaps, you'll like it that way also!

Japanese tofu recipes don't get much easier than this, well, aside from maybe something like hiyayakko (cold tofu).
If you're looking for more vegetarian tofu dishes or Japanese side dishes, shiraae is a delicious way to accomplish both searches!
☝TIP - always make sure you remove excess water from your tofu-
The primary types of tofu I use are soft tofu and firm tofu. One of the key steps in making any tofu dish a success is removing excess water from the tofu.
Tofu is over 80% water. So if not drained properly you’ll end up with a diluted seasoning or sauce.
By removing excess water, you also concentrate the tofu flavor, umami, and improve the texture. If you're frying it, it'll reduce any splattering caused by water mixing with oil.
There are several ways you can remove excess water from tofu. Also referred to as mizuwokiru (水を切る), literally to cut the water.

This recipe doesn't require any kind of meat to stir fry with to make a taste. Suitable for vegetarian and can enjoy the food even without rice.
The reason why I have to boil the beans first is to make the color better and not overcooked when cooking. It makes it crunchy and chewable.
The Dried Beancurd can be substituted with any meat if you want to.
