Soft, silky tofu in a rich, spicy, flavorful meat sauce...it's always a crowd pleaser. There are a few ingredients to get to know if you haven't had much experience with Chinese cooking, but the process is really straight forward and can be a relatively quick dishes .
Ingredient for Mapo Tofu
- 1 Pack Soft Tofu
- 100g Mince Pork
- 2-3 Clove Of Garlic
- Spring Onions
Seasoning Meat Ingredients
- 1/3 Tsp pepper
- 1 Tsp Soy Sauce
- 1 Tsp Tapioca Flour
Seasoning Sauce Ingredient
- 1 Tbsp. LAO GAN MA Bean Sauce With Chilli
- 1 Tbsp. Oil LAO GAN MA Bean Sauce With Chilli
- 1 Tsp. Chilies Flakes
- 2 Tbsp. Oyster Sauce
- 1 Cup Of Water
- 2 tsp Tapioca Flour + 3 Tbsp. water

Ingredients
For the Sauce
2 tbsp tobanjang, Chinese chili bean paste
1 tbsp oyster sauce
1 tbsp soy sauce
1 tbsp shaoxing wine, optional
1 tbsp black vinegar
1 tsp sugar or agave nectar
For Mapo Tofu
1 tbsp cooking oil
1 tbsp chili oil (you can substitute to cooking oil)
3 cloves garlic, chopped
2 oz ginger, chopped
1 red chili, chopped (optional)
3 green onions, chopped
1 tbsp toasted and grind Sichuan peppercorn*
1/2 lb ground pork, chicken, beef, lamb, turkey, crumbled tofu, chopped mushrooms or plant based meat
2 cups chicken or vegetable stock
1 block (14 oz) silken tofu, cut into 3/4-inch cubes
1 tbsp corn starch

This time, we had Chef Chen Kenichi, the Iron Chef of Chinese cuisine, to show us how to make a delicious mapo tofu.
- Ingredients (for 2 servings)
1 firm (momen) tofu
Hot water for boiling tofu
salt to taste
1/3 scallion, finely chopped
1 garlic leaf
80g ground pork
1 tbsp tianmianjiang
shaoxingjiu
A dash of soy sauce
A dash of pepper
2 to 3 tbsp salad oil
1 tsp garlic
1 tbsp doubanjiang
1 tsp Sichuan pepper powder
1 tbsp red chili oil
Chicken broth (or water) as needed
1 tbsp douchi, finely chopped
1 tbsp shaoxingjiu
1 tbsp soy sauce
A little of pepper
2 to 3 tbsp potato starch dissolved in water
[For finishing]
Red chili oil sediment
Sichuan pepper oil
Oil, to grease
Sichuan pepper powder

Mapo Tofu (serves 2-3)
Ingredients:
300g firm tofu, about 1 piece, diced 90g minced pork
2 Tbsp of Lee Kum Kee Premium Oyster Sauce
1 Tbsp of Lee Kum Kee Chilli Bean Sauce (or Chilli Garlic Sauce)
1 Tbsp cooking oil
1 tsp Sichuan peppercorns (if you like that numbness)
Method:
1. Marinade the pork with Oyster Sauce and set aside for 10 minutes.
2. Heat the oil and sauté the peppercorns for 1-2 minutes. Add minced pork and the Chilli Bean Sauce. Add the tofu when the pork is cooked.
3. Turn the heat down to simmering and cook for further 5 minutes to reduce the sauce down before serving.
TIP: Why not swap the minced pork with Quorn or sweetcorn and use Lee Kum Kee Vegetarian Stir-fry Sauce instead of Premium Oyster Sauce to turn this into a vegetarian dish.

Now retired, my dad has over 50 years of experience as a Chinese chef. Everything he makes is SO GOOD. You won't regret trying this amazing Ma Po Tofu recipe (麻婆豆腐)!
Whereas traditional Sichuan cuisine is known for its bold and intense flavors, my dad's version of Mapo Tofu is a gentler version with a nice kick of spice (although you can still turn it up x100 ????).
This classic Chinese tofu dish hails from Sichuan, at the Chen Xinsheng Eating House in 1862. It quickly developed national acclaim, inspiring generations of chefs to come, and spurring hundreds of variations.
Correction:
At 8m 06s, the correct word for light taste is 清淡 chīngdaahm. The graphic has a slightly different connotation.
