How To make Fried Bean Curd with a Sweet & Sour Sauce
1 1/2 ts Cornstarch
3 tb Stock
3/4 c Stock
3 tb White vinegar
3 tb Sugar
1 tb Tomato ketchup
2 tb Soy sauce
1/2 ts Salt
1/4 ts Cayenne
Freshly ground black pepper 1 tb Oil
1 Garlic clove, peeled
1 sl Ginger root
1 Carrot, sliced
1/2 sm Red bell pepper, cut into
strips 1/2 sm Green bell pepper, cut into

strips 2 Scallions, sliced
3/4 lb Tofu, cubed
2 1/2 ts Salt
2 tb Vegetable oil
Mix cornstarch with 3 tb stock. Combine 3/4 c stock, vinegar, sugar, ketchup, soy sauce, 1/2 ts salt, cayenne & black pepper in a bowl. Heat 1 tb oil in a small pot over a medium flame. When hot, toss in garlic & ginger. Stir. As soon as the garlic browns, remove pot from the heat & pour vinegar mixture from the bowl into it. Put pot back onto the heat & bring to a boil. Reduce heat & simmer for 4 minutes. Add cornstarch mixture. Stir till sauce thickens. Add more salt if required. Remove garlic & ginger. Put tofu cubes into a bowl. Add 2 ts salt to 6 cups water & bring to a boil. Pour boiling water over tofu. Let them sit for a while. Heat 2 tb oil in a wok. Put in 1/2 ts salt & carrot, peppers & scallions. Stir fry for 30 seconds. Turn off heat. Heat prepared sauce over a low heat. Take tofu out of the hot water. Squeeze gently to get rid of excess water & place on a serving platter. Ingredients:
400g silken tofu (pressed, freezed and thawed for three cycles)
3 tbsp nutritional yeast
1 tsp garlic powder
2 tbsp cornstarch
1 tbsp low sodium soy sauce
2 tbsp olive oil
1 tbsp non dairy milk
air fry at 200°C for 8-10 minutes
Sweet and Sour Sauce
1/4 cup apple cider vinegar
1/3 cup ketchup
1/3 cup sweetened pineapple juice
2 tbsp low sodium soy sauce
2 tbsp cornstarch
black pepper
Other Ingredients:
2 tbsp olive oil
3 cloves garlic
2-3 red onion
1 red bell pepper
1 green bell pepper
3/4 cup pineapple tidbits
salt and pepper to taste

This dish is so flavourful, easy to make can be made in 30 mins. Sweeness of maple syrup and sourness of soy sauce and vinegar and spice of chili paste makes the exact balance of the dish.

This is one of my favourite recipes, sweet and sour tofu, that is vegan, and made in a video by me, Calum, aka @madebyblitz, Blitzy or whatever you want to call me. I am a 22 year old that makes completely vegan meals that are simple to make, are good to eat and it uses up ingredients you can actually get a hold of.
This recipe you'll keep making again and again, and actually tastes as good as the takeaway you all know and love! It's also done in 20 minutes which is utterly mad considering that this recipe can take hours.

Cantonese Smothered Tofu (锅烧豆腐)
Wosiu tofu (smothered tofu is my own personal translation) is a relatively newer dish - it consists of fried tofu smothered in a thick mushroom based sauce. Not much to say here - it's a tasty tofu dish, try it.
