Tofu and Pineapple Stir Fry

If you want to keep a balanced diet, it’s good to include a healthy ingredient like tofu. Give it a new and fresh flavor profile by cooking it in this Asian-inspired marinade, with soy sauce, and rice vinegar. Mix it with pineapple, which adds its sweet and exotic taste to a dish that may very well surprise you with its unique flavor!

鳳梨豆腐乳 Pineapple fermented Tofu
鳳梨豆腐乳
食材:
1. 豆腐 700g
2. 鳳梨 500g
3. 糖 500g
4. 海鹽 50g
5. 30度以上米酒 30 cc
步驟
1. 豆腐切2到3公分立方
2. 豆腐放容器內, 上壓重物, 冷藏2天
3. 放室外曬乾至少一天
4. 鳳梨切小塊加糖冷藏3小時
5. 一層鳳梨,一層豆腐放入容器
6. 加入米酒蓋過鳳梨和豆腐
7. 放陰涼處發酵3個月以上

Pineapple fermented Tofu
Ingredient:
1. Tofu 700g
2. Pineapple 500g
3. Sugar 500g
4. Sea Salt 50g
5. Rice wine [ 30% Alc ] 30 ml
Steps:
1. Cut tofu into 2 to 3 cm cubes
2. Put tofu in a container, put heavy plates on it, refrigerate 2 days
3. Expose to sunlight at least one day
4. Cut pineapple into small pieces, add sugar and refrigerate 3 hours
5. Put a layer of pineapple and a layer of tofu into the container
6. Add rice wine to cover pineapple and tofu
7. Put it in a cool place to ferment 3 months

Beancurd, also known as Tofu 豆腐, is a popular food component in Asian cuisines. They can be soft, semi-soft and firm. This beancurd recipe makes use of fried beancurd. Upon frying, the white smooth beancurd is transformed into golden, spongy goodness infused with intense Thai flavours. Any way you cook it, beancurd is remarkably nutritious and healthy too.
This Thai style fried beancurd dish is extremely easy to make and delicious, not to mention healthy. It has a little bit of heat and is very taste-bud tantalising. Kaffir lime leaves, lime juice and lemongrass give this fried beancurd such a fresh, Thai-inspired flavour. Who says beancurd has to be boring? The recipe can be whipped up in a jiffy, so it makes a great weekday as well as weekend meals. Best served with hot jasmine rice.
