Greek Peinirli, or pizza boats, come from the Turkish ‘pide’. These gorgeous little bakes are a bakery must-buy when we’re back in Rhodes (I must admit, they become a bit of a breakfast staple!), but I’m not prepared to do without them when back in the UK! This recipe is quick and easy - a great way to enjoy bakery-standard treats at home! What toppings would you opt for?

Dough Recipe
Ingredients
For dough
Warm water (105°F) 3/4 Cup
Active yeast 1 packet
Sugar 1 Tablespoon
Sifted bread flour 2 1/4 Cup (Plus more for kneading)
Salt 1 1/4 Teaspoon
Olive oil 1 Tablespoon plus xtra for coating dough ball
Directions
1. Dissolve sugar and active yeast to warm water (105°F). Leave it for 5 minutes and the yeast will begin to form a froth at the top proving that the yeast is good.
2. Put bread flour in a bowl, create a well in the middle, pour in the yeast mix. Add olive oil and salt as well. Gradually start incorporating the flour with the yeast mix until everything is well mixed and takes dough form.
3. Knead the dough, on a floured work surface. Knead it for about 10 minutes or until it begins to have elasticity and bounces back.
4. Rub olive oil over the dough, place it back in a bowl. Cover and let the dough sit in a warm place for about 2 hours to rise.
5. Punch to knock out excess air and then place the dough in the refrigerator covered overnight. Next day remove dough from refrigerator and let it come back to room temperature. Around 2 hours. Roll out dough to build a pizza crust using extra flour to prevent sticking and build your pizza onto the dough.
6. Preheat the pizza stone to 500 - 550F. Maintain this temperature for cooking.

THIS ENTIRE RECIPE IS 10SP!
INGREDIENTS :
1/2 cup Zero fat Greek Yogurt
1/2 cup Brodies self raising flour
(add garlic and onion powder, Italian seasoning) 6sp
15gms low fat feta cheese
1/4 cup Saputo light mozzarella cheese or any low fat cheese 2sp
1tbs black sliced olives
10 slice of turkey pepperoni (optional) or any other protein
1/4 cup or more fresh spinach or any vegetables that you want
1.5 tbs or more pizza sauce
Oregon just a sprinkle
Olive oil spray
DIRECTIONS:
I used an 8X8 or 2litre pyrex square pan lined with parchment paper
You can use a round or any small size pan
*CHECK MY YOUTUBE VIDEOS ON HOW TO MAKE THE TWO INGREDIENT DOUGH!!*
PREHEAT YOUR OVEN TO 375 DEGREES (I USED CONVECTION TO MAKE IT CRISPIER)
After making the dough add it to your pan
If you want a crispier dough spray with olive oil spray and place in the oven for 25 minutes
Then add sauce, spinach, mozzarella and feta cheeses, olives, pepperoni on top
Place in middle rack of your preheated oven
Bake for 30 minutes
If you want you can put on broil for the last two minutes for extra crispy pizza!
