Ingredients:
14 oz potatoes, peeled, thinly sliced
10½ oz carrots, peeled, thinly sliced
7 oz leeks, thinly sliced into rings
¼ cup parsley, chopped
1 cup cheddar cheese, grated
1 cup mozzarella cheese, or provolone, monterey jack cheese
10 rashers bacon, thinly sliced
cooking spray
salt and ground black pepper, to taste

Easy Carrot Casserole Recipe | How to Make BEST Carrot Casserole
This Easy Carrot Casserole is super-duper tasty, tender and healthy! The Carrot Сasserole is perfect for breakfast or dinner, especially pleasant to your kiddies.
INGREDIENTS
500 g carrot
2 eggs
1 cup prunes
1 cup raisins
200 g farmer’s cottage cheese
2 tablespoons corn flour
1 tablespoon brown sugar
PREPARATION
1. Preheat oven to 365°F/180°С.
2. Clean carrots.
3. Place carrots and enough water to cover them in a saucepan. Bring to a boil, and cook until carrots are very tender. Drain. Using a blender or food processor, puree carrots to a smooth consistency.
4. Cut the prunes into small pieces.
5. In a large bowl, mix together the carrots, prunes, brown sugar, corn flour, eggs, raisins and cottage cheese.
6. Grease a baking dish with butter and sprinkle with sugar.
7. Place the dough in a baking dish and bake for 25 to 30 minutes in the preheated oven, or until set.

1 pepper
3 carrots
1 zucchini
Olive oil
Salt & pepper
Preheat oven to 450 degrees F. Roast vegetables for 15-20 minutes until tender.
Cream mixture:
1 cup sour cream
1 cup heavy cream
1 & 1/2 cups mozzarella cheese
Italian parsley (optional)
Bake the vegetables mixed with the cream mixture for 15 more minutes or until golden on top.
