CARROT CASSEROLE
1/2 cup salted butter 1/2 cup chopped onion 1/4 cup all purpose flour 1 teaspoon dry ground mustard 1 teaspoon salt 1/2 teaspoon pepper 2 cups milk 1 cup shredded sharp Cheddar Cheese 12 carrots, peeled and sliced in 1/2 inch slices 1 cup bread cubes 1 Tablespoon melted butter
LETS MAKE IT-
Preheat oven to 350F. Spray a 9x13 baking dish with non stick spray. Steam or boil the carrots will just fork tender, about 8 minutes. Drain and add to the prepared baking dish.
In a saucepan, add the 1/2 cup butter and sauté the onion till tender, about 2 minutes. Add flour and spices. Stir till combined. Stir and cook for several minutes and then add the milk. Whisk to combine. Continue to cook till thickened. Remove from heat and stir in the cheese.
Pour the cheese sauce over the carrots and combine lightly. In a small dish, add the melted butter to the bread cubes, stir to coat and place on top evenly. Bake for 30 minutes. Enjoy!

THIS WEEKS RECIPE: How to make Finnish Christmas Carrot Casserole
Ingredients Servings: 6-8
7 lbs. Carrots (3kg) 4 Tablespoons Breadcrumbs ¾ Cup Whipping Cream (1.5dl) 2 Teaspoons Salt 2.5 oz. Dark Syrup (0.75dl)
Directions Oven Temperature: 425ºF (225ºC)
Time: 40min 1. Peel the carrots and chop them into small pieces 2. Cook the carrots in salted water until they get soft. This can take some time 3. When the carrots are soft remove from heat and drain the remaining water and let cool for a while 4. Puree the carrots and double check that no lumps remain 5. In a second bowl mix cream and breadcrumbs and the pour it over the carrots 6. Mix it well with the pureed carrots 7. Add salt and dark syrup and combine 8. Do a taste check, it should be sweet but not overly sweet and the carrot taste should be prominent 9. Transfer the carrot mixture into oven safe containers and sprinkle some breadcrumbs on top 10. Bake in oven for 40min 11. Done! Enjoy
