Grated Apple Pie Recipe From 1898 - Old Cookbook Show
Grated Apple Pie Recipe From 1898 - Old Cookbook Show
This recipe shares a common history with many early apple pies going back to the 1600s in England. You can see similarities to a recipe we did from Robert May's 1685 cookbook 'The Accomplished Cook': This pie recipe is a cross between an apple pie and a custard pie with a meringue topping, and is closely related to Marlboro Pie.
Grated Apple Pie.
Beat together until light and creamy the yolks of 3 eggs and ½ cupful sugar, then stir in 1 cupful of freshly-grated apple, mix well, then add ¼ cupful sweet thick cream, add also the grated rind of I small lemon, a few grated almonds, and seeded raisins may be added if desired, but the pie is nice without them.
Line a flat pie plate with rich pastry, pour in the apple mixture, and bake in a moderate oven until light brown, then spread with a meringue made of the whites of the 3 eggs beaten stiff and 6 level table. spoonfuls sugar added. Brown lightly. Serve cold.

125 g (1 cup) wheat flour
120 g (2/3 cup) semolina
120 g (2/3 cup) sugar (can be replaced with brown cane or coconut)
5 g (1 tsp) baking powder
2 g (1/4 tsp) salt
1 tsp cinnamon (can be replaced with vanilla) - optional
8 pcs. apples, medium - 1.2 kg of apples
80 g (1/3 cup) butter (cold)
45 g (2 tbsp) brown cane sugar (can be replaced with any other)
________________________________________
20 g (2 tsp) powdered sugar (for dusting)
????????Instructions:
????Turn on the oven for 175-180 C (360 F). MODE: Upper and Lower heat
✅Combine all dry ingredients: Combine flour, semolina, sugar, baking powder, salt. Mix it up.
✅Prepare apples: Peel the apples and grate them on a coarse grater.
✅Assemble the cake: Lay the parchment on the bottom of the split mold. Alternating layers, assemble the future cake: start with the dry part. The thinner the layers, the better. Finish the assembly with the dry part. Rub cold butter on the top and sprinkle with brown sugar (or any other).
✅Bake in the oven, preheated to 175-180C, 55-60 minutes.
*If the top begins to actively turn golden, you can cover the mold with foil so that the top of the pie does not burn.
*Allow the cake to cool for 1 hour, remove from the mold and sprinkle a thin layer of powdered sugar on top (optional).
ENJOY!

In a bowl mix together flour, sugar and salt.
Using a pastry cutter or a fork, cut the butter into the mixture until the mixture is crumbly and fairly even-textured. There will be a few larger chunks. I like to mix it with hand too.
Add water and form a dough.
Wrap dough in plastic wrap, flatten it into disc and refrigerate for 1 hour.
Lightly grease and flour 10(25 cm) baking dish.
Roll out the chilled pie dough. Place the dough into prepared baking dish and press the edges. Cut the excess dough. Pinch the edges and poke the dough with a fork to create air pockets.
Peel and grate the apples.
Add light brown sugar, flour, cinnamon, nutmeg and lemon juice to a bowl with apples. Stir well to combine.
For the crumble, combine flour, light brown sugar and butter. Mix with a fork until crumbly.
Preheat the oven to 350 F (180 C).
Spoon and press the apple filling to the side of a bowl to squeeze out some of the liquid and place the filling into the crust.
Sprinkle the crumble over the apples.
REFRIGERATE PIE FOR 15 MINUTES BEFORE BAKING!
Bake in preheated oven for 55-60 minutes or until lightly browned on top.
Allow the pie to cool for minimum 3 hours before serving.
Serve with vanilla ice cream.
This pie is the best cold, from the refrigerator.

Grandmother's Awesome Shredded Apple Pie
Ok, so Mark was right, this was one of the best apple pies I have ever eaten...Mark said I could have added slightly less cinnamon, but it was not overpowering. I may make this filing with an apple crisp topping as well... #HerHomesteadSkills #ApplePie #ShreddedApplePie
Pastry Ingredients -
(for a two crust pie) p.s EVERYTHING SHOULD BE COLD!!!
2 1/3 cups flour
1 tsp salt
1/2 cup butter,
1/2 cup lard,
1 egg,
2 tsp vinegar
2 tbsp water
Pie Filling Ingredients - for a single 8/9/inch pie
(I modified this for my purposes for multiple 5.5 inch smaller pies )
1 1/4 cups Half Brown and Half White Sugar
1/2 cup butter softened (I use salted)
2 Tablespoons flour
2 teaspoons vanilla
1 teaspoon ground cinnamon
1/2 teaspoon nutmeg
a pinch of salt
2 large eggs
approx 4 to 6 apples ( I used Golden Delicious and Spry) peeled and grated
Instructions
Preheat oven to 350 degrees F.
Mix and beat the sugar, butter, flour, vanilla, cinnamon, nutmeg, salt and eggs until thoroughly
blended and then fold in the shredded apples.
Pour mixture into an unbaked pie shell. Place pie on a large cookie sheet to catch drippings and bake for 70 minutes. Mailing Address: P.O. Box12534 Martinway Plaza, Weston, On, M9R 4C7
