안녕하세요~. 조꽁드 입니다. ^^
이 번엔 자몽 케이크 입니다. 정말 정말 오래전에 디자인을 구상하고 레시피를 여러번 바꿔가면서 정리해 두었던 케이크 인데요. 그동안 미뤄 왔었지만 이제 그만 결실을 맺어야 겠다는 생각이 들었습니다.
자몽이 요거트 그리고 화이트 초콜릿과 만나면 환상의 궁합입니다. 맛도 좋고 부드럽고 입안에서 시트러스 향이 진동을 합니다. 저는 자몽 자체를 즐겨 먹지는 않지만 이상하게도 자몽을 케이크로 만들면 정말 맛이 좋더라고요.
이 케이크는 자몽 1개 정도의 즙으로 만들 수 있는 레시피 입니다.
그리고 자몽의 느낌을 더 내기 위해 미니 사이즈로 만들었어요.
그리고 케이크 윗 부분의 자몽 무늬를 내기 위해 물방울 모양 쿠키 커터를 사용했어요.
젤리를 커터로 찍어 낸 후 케이크 바닥에 배열하고 크림을 부었어요.
이렇게 하여서 나중에 그 부분이 위로 가게 하면 매끈한 윗면이 나옵니다.
만들고 보니 오렌지 모양 수제 사탕 닮았다는 생각도 드네요. ㅋㅋ ^^
그래도 깔끔한 외관이 자몽과 잘 어울리는것 같아요. 여러분 생각은 어떠신가요? ^^

♥︎자몽젤리
자몽쥬스 90g
설탕 30g
젤라틴 3.5g
♥︎자몽크림( 10cm 무스링)
설탕 12g
옥수수 전분 3g
자몽 쥬스 65g
자몽 제스트 약간
젤라틴 2g (영상에 빠졌습니다. 넣어야 합니다. )
화이트 초코 40g
무염버터 25g
♥︎요거트무스
데운 자몽쥬스 20g
젤라틴 3.5g
생크림 140g
플레인 요거트 70g
설탕 25g
♥︎ 비스퀴 ( 33x22cm 사각팬)
달걀 노른자 2개
설탕 10g
우유25g
식물성오일 20g
박력분 40g
달걀흰자 2개 +설탕 40g
♥︎ 물방울 모양 쿠키커터 길이 5.4cm

This time it's a grapefruit cake. It's a cake that I really, really long ago devised a design and changed recipes several times. I had been putting it off for a while, but now I thought I had to finish it.
Thes Grapefruit Cake is a fantastic combination of Grapefruit, yogurt, and white chocolate. It tastes nice and soft, and the citrus scent spreads in your mouth. I don't like to eat grapefruit itself, but strangely, grapefruit cake really tastes good.
This recipe can be made with the juice of about 1 grapefruit.
And I made it into a mini size to give it a more Grapefruit feel.
I used a water drop-shaped cookie cutter to make the grapefruit pattern on the top of the cake. After cutting out the jelly with a cutter, I arranged it on the bottom of the cake and poured the cream.
In this way, if the cake is flipped up later, you will get a smooth top.
After making it, I think it resembles an orange-shaped handmade candy. Hahaha ^^ But still, the neat appearance seems to go well with Grapefruit. What do you think? ^^

90g grapefruit juice
30 g sugar
3.5 g gelatin
♥︎Grapefruit cream (10cm mousse ring)
12 g sugar
3 g corn starch
65 g grapefruit juice
A little grapefruit zest
2 g gelatin
40g white chocolate
25g unsalted butter
♥︎ yogurt mousse
Warm grapefruit juice 20g
3.5 g gelatin
140g fresh cream
70 g plain yogurt
25 g sugar
♥︎ biscuits (33x22cm square fan)
2 egg yolks
10 g sugar
25g milk
20 g vegetable oil
40 g soft flour
2 egg whites + 40g sugar
