The recipe -
Serves 4
1-2 lb boneless leg of lamb, cut into 1 inch pieces
1/4 cup vegetable oil
4 large carrots, peeled and cut into 1 inch chunks
2 large onions, peeled, halved and sliced
3 large parsnips, peeled and cut into 1 inch chunks
1 rutabaga (swede) peeled and cut into cubes
2 sprigs fresh thyme
2 cups (about 10) small gold potatoes, cut in half
2 quarts lamb broth (or chicken or beef broth)
salt and pepper to taste
1/4 cup fresh chopped parsley
Add the oil to a large pot and heat until smoking. Carefully add the lamb and stir until brown. (drain off the fat - optional)
Add the vegetables and stir (don't add the potatoes until half way through cooking)
Add the thyme and broth, cover with a lid and simmer for 1 hour or until the meat is tender. Season with salt and pepper and serve.
Garnish with the chopped parsley.

Today I'm going to bake a lovely traditional Irish soda bread. My grandmother used to make it and everyone around the country used to make it. It's very fast and easy to make. You can have it in the oven in 10 minutes. It will bake in about 35 or 40 minutes.

Start with Large bowl and a sieve. Place flour in the sieve, then baking soda, and a pinch of salt. Sieve flour into bowl. Make a little well in the centre of the flour.
Then add 14 oz of buttermilk. Only putting 12 oz of buttermilk at first, stir from the outside in, work into middle, until mixed to a soft dough. Add remaining buttermilk.
Takes about 1 minute to bring to the consistency, anybody can make this, nobody should be hungry. This will be delicious with lovely soup, or anything really, maybe with some nice cheese and ham or just as lovely toast.
Place into hand and shape into round shape. Then place on tray. flatten it out a small bit and place Cross in the middle. 1 inch high.
????Preheat oven 200 degrees centigrade or 350 degrees F or gas mark 3.
????????Leave for 35 to 40 minutes or till nice and golden. Top Tip... Tap to make sure hollow sound.
This is the type of bread that you can make anywhere in the world like the USA ???????? or UK ???????? which reminds you of the beautiful emerald Isle ???????? ☘️
It is a rustic bread but it's very delicious. It's lovely with butter or jam or which ever way you like it????????????
