How To make Good Neighbor Szechuan Noodles
1 lb Oriental noodles*
3 tb Tamari or soy sauce
preferably tamari 1 tb Vinegar
2 ts Chili paste with garlic
2 tb Tahini
1 tb Toasted sesame oil
1/2 c Chicken broth**
2 tb Oil (peanut or canola)
1/2 lb Fresh mung bean sprouts
6 oz Fresh spinach
:
roughly chopped *Any thin, flat noodle can be substituted for Oriental noodles. **Good Neighbor uses vegetarian chicken-flavored broth powder. Cook noodles according to package directions; drain and cool. Combine tamari, vinegar, chili paste, tahini, sesame oil and broth; set aside. Heat about 2 tb. oil in wok. Add noodles; toss until warm and browning. Add bean sprouts and spinach; mix. Add sauce mixture; toss. Serve while hot. Yield: 6 to 8 servings. Haven't tried yet. Dan Dan noodles ingredients
600g dried noodles (store-bought)
2 tablespoon crushed peanuts
1/2 cup sliced spring onion
Baby bok choy or other Asian vegetables
Chili oil
Chicken for Dan Dan noodles
2 cloves garlic - mince
500g minced chicken
2 tablespoon oil
1 tablespoon hoisin sauce
1 tablespoon rice vinegar
2 teaspoon dark soy sauce
1 teaspoon Chinese 5 spice powder
1/3 cup preserved radish
1 tablespoon cornflour
2 tablespoons water
Dan Dan noodles sauce
4 tablespoons tahini
6 tablespoon soy sauce
4 teaspoons sugar
1/2 teaspoon five spice powder
1 teaspoon sichuan peppercorn (ground and sieve)
1/2 cup chili oil
2 cloves garlic minced
1/4 cup hot water from boiling noodles

Sichuan Mapo Tofu, plus a (hopefully educational) look at the CIA Textbook's version (麻婆豆腐)
A special two year anniversary video! We wanted to revisit Mapo Tofu, probably the most popular tofu dish on the planet. A while back we made a video on Mapo Tofu, and while we still like that recipe, we wanted to improve it to get a bit closer to Chengdu.
And just for fun, we decided to place our new recipe up against the recipe for Mapo Tofu from The Professional Chef, the textbook for the Culinary Institute of America. While one look at the thumbnail could probably tell you that there's a few problems there, we wanted to take the time to explore and show you how precisely that recipe errs. Hopefully, in the process, we can impart some guidelines... some things to avoid. After all, sometimes learning how *not* to do something can be just as - if not more - illuminating than how *to* do something.
