1 POTATO! They're so delicious that I make them for dinner every weekend. No oven
Ingredients and recipe:
1 potato (200g)
Dice the potato
Place in a pot
Water
Cook for 15 minutes on medium-high heat
Drain the water
Mash the potatoes
1 onion
Slice the onion
50g carrot
Shred the carrot
Medium heat
Olive oil
Cook for 2 minutes
Add the carrot
Cook for 3-5 minutes
Add to the mashed potato
Mix well
1 egg
2tbsp flour
30g parmesan cheese
10g parsley
Salt
Black pepper
Paprika
Mix well
A bit of oil
Scoop some potato and shape it into a ball
Coat in bread crumbs
Medium heat
Vegetable oil
Place the patties in the pan
Fry for 3-5 minutes
300g cucumber
Thinly slice the cucumber
1tsp salt
Let sit for at least 10 minutes
Flip over and fry for another 3 minutes
Done!
2tbsp sour cream and 1tbsp mayonnaise
8g dill and 2 cloves of garlic
Mix well
After 10 minutes
Squeeze out the exceed liquid
1tbsp soy sauce
1/2tsp rice vinegar
1/2tsp white sugar
1/2tsp sesame oil
A pinch of salt
Mix well
Dice some ginger
1tsp ginger
1tbsp white sesame seeds
Roast for 3-5 minutes on low heat
Add to the cucumbers
Mix well
So crispy and delicious!
Super delicious with the sauce and cucumber salad!

Making Creamy Cucumber Salad Cucumbers In Sour Cream
This is an old family dish that we enjoyed in the summer months when the garden was supplying lots of fresh cucumbers. Very easy to put together and you can make it a little ahead of time.
Creamy Cucumber Salad
3 medium cucumbers - seeded (optional) and sliced thinly
1 cup sour cream
1/2 tsp salt
1/4 tsp pepper
1 TBSP apple cider vinegar (more or less to taste)
1 TBSP sugar (more or less to taste)
3 green onions/scallions (green part only), chopped
In a large bowl, combine sour cream, salt, pepper, vinegar and sugar. Mix well and taste. Adjust seasoning to taste - add a bit more vinegar or sugar if you prefer it a little more tangy or sweet.
If the cucumbers have large seeds, you can slice cuke lengthwise and scoop out the seed with a spoon. Some varieties have very small and tender seeds, so you could leave those as-is if you like.
Slice cucumbers thinly. I use a mandoline for this task, but you can also just use a sharp kitchen knife.
Chop the green parts of three green onions. Add the sliced cukes and chopped green onions to the sour cream mixture and gently toss to make sure everything is coated and combined. Cover bowl with plastic wrap and refrigerate for an hour.
Serve cold. If you like, garnish with fresh dill, chopped chives or more green onion.

Enjoy the video...
1.) Choose some healthy looking fresh pickling cucumbers, about 8 pounds.
2.) Wash them and cut into quarters.
3.) Chop them in a food processor....or by hand.
4.) Place in a large bowl.
5.) Grab 1/2 Cup of canning salt and 2 tsp. of Turmeric.
6.) Sprinkle the cucumbers with the salt and turmeric and cover with water. Set aside for a couple hours.
7.) While you're waiting fill a canner of your choice with enough water to cover your selected jars by 2 inches.
8.) Rinse under cold water.
9.) Return to a clean bowl.
10.) Now give it all one more good rinse in cold water.
11.) Place rinsed cucumbers in a large stock pot.
12.) Grab a pound of onions from the garden...or the market, or the food bank, or your neighbor’s house....don't forget to ask permission first!
13.) Wash & chop the onions and place in the stock pot with the cucumbers.
14.) You will need 1/3 cup of honey (or sugar), 2 T. of dill seed and 1 quart of white vinegar.
15.) Place those measured ingredients into the stock pot with the onions and cucumber.
16.) Now bring it to a boil and simmer for 10 minutes.
17.) Make sure your jars and lids are clean.
18.) Grab a bubble popper.
19.) Wet down a paper towel or soft cloth with water.
20.) Make sure your rings are clean.
21.) Time to fill the jars.
22.) Pack the jars and leave 1/4 headspace.
23.) Run the bubble popper along the outside edge of the jar to remove any sneaky bubbles.
24.) Wipe the rim of the jar with your wet towel.
25.) Grab a lid with the magnetic end of your bubble popper.
26.) Place the lid on top of the jar.
27.) Place the ring on top of the lid and jar.
28.) Only finger tight though!
29.) Place the jars in your canner. Put a lid on it. Crank up the heat and bring to a full rolling boil. When it's at a full boil start a 15 minute timer. Process both pints and half pints for the full 15 minutes. Do not allow the water to fall below the tops of the jars or go below a full rolling boil. NOTE: Add 5 minutes cooking time above 1,000 feet altitude and 10 minutes over 6,000 feet.
30.) When the timer goes off, turn off the heat, remove the lid and let them sit in the canner for 5 minutes before removing.
31.) Remove the jars with a jar lifter and place on a towel.
32.) Let the jars sit all alone for 12-24 hours until completely cool.
33.) When completely cool remove the rings.
34.) Then press the tops and lift from the lid to verify the jars have properly sealed.
35.) Now wipe the lids and jars with a wet towel.
36.) Once dry, write the date on the lid (or a sticker if you prefer).
37.) And finally stick a label on the jar! All Done!
