Veg Schezwan Noodles Recipe | वेज शेज़वान नूडल | Chef Sanjyot Keer
Full recipe for Veg Schezwan noodles
Prep time: 10 mins
Cooking time: 15 mins
serves: 4
For boiling noodles
Ingredients:
• Noodles 1 packet
• Boiling water for noodles
• Salt to taste
• Oil 1 tsp
Method:
• Boil water in a wok, add salt and oil, add the noodles and boil for 6-7 minutes.
• Rinse the noodles with cold water or with tap running water.
• Pour few drops of oil and mix with noodles to avoid it from sticking to each other.
For making noodles
Ingredients:
• Oil 1 tbsp
• Onion 1 medium size (sliced)
• Garlic 1 tbsp (chopped)
• Ginger 1 tbsp (chopped)
• Dry red chilli 1-2 nos. (broken)
• Carrots ½ cup (julienne)
• Capsicum 1/4th cup (julienne)
• Red bell pepper 1/4th cup (julienne)
• Yellow bell pepper 1/4th cup (julienne)
• Cabbage 1 cup
• Sugar 1 tsp
• Schezwan sauce 2 tbsp
• Ketchup 1 tsp
• Red chilli sauce 1 tbsp
• Light Soy sauce 1 tsp
• Vinegar 1 tsp
• Salt to taste
• White pepper ½ tsp
• Spring onion greens 1 tbsp
Method:
• Heat oil in wok add onion, ginger, garlic and broken red chilli, sauté on high flame for a minute.
• Add the veggies and sugar, sauté on a high flame for a minute.
• Add he sauces, salt and white pepper, sauté again on a high flame for a minute.
• Add the boiled noodles and spring onion greens. Cook on high flame for 1-2 minute.
• Serve hot.

Mala Noodles - Spicy Sichuan Mala Xiao Mian (重庆麻辣小面)
Chongqing Mala Xiaomian is a classic spicy noodle dish - a street food staple in Sichuan.
It's got a lot of similarities to Dan Dan noodles, but the flavor's predominantly spicy and numbing. After a good mala xiaomian, your forehead should be sweating and your mouth tingling.

Noodles is almost everyone's favourite comfort food. It is such a food item that it can be made it into different varieties according to one's liking and taste, be it vegetarian, non-vegetarian, simple, flavourful, ramen, etc. The list simply goes on. Here, we are trying a restaurant style Schezwan Noodles. This variant is slightly spicy but very inviting. As the Schezwan Sauce can be incorporated in other dishes like fried rice and pastas, we're showing how to prepare the sauce from scratch and saving it for later use as well. Hope you all enjoy this Schezwan Noodles recipe.

— INGREDIENTS —
## For Schezwan Sauce ##
Dry Red Chilli (ഉണക്കമുളക്) - 60 gm
Hot Water (ചൂടുവെള്ളം) - 1 Litre (4 Cups)
Refined Oil (എണ്ണ) - ½ Cup
Finely Chopped Ginger (ഇഞ്ചി ചെറുതായി അരിഞ്ഞത്) - ¼ Cup (30 gm)
Finely Chopped Garlic (വെളുത്തുള്ളി ചെറുതായി അരിഞ്ഞത്) - ½ Cup (60 gm)
Finely Chopped Celery Stick (സെലറി ചെറുതായി അരിഞ്ഞത്) - ¼ Cup (30 gm)
Water (വെള്ളം) - 1 Cup (250 ml)
Vinegar (വിനാഗിരി) - 3 Tablespoons (45 ml)
Sugar (പഞ്ചസാര) - 1 Teaspoon
Salt (ഉപ്പ്) - 1 Teaspoon
## For Cooking Noodles ##
Water (വെള്ളം) - 1½ Litre (6 Cups)
Refined Oil (എണ്ണ) - 1 Tablespoon
Salt (ഉപ്പ്) - 1½ Teaspoon
Noodles (നൂഡിൽസ്) - 200 gm

Tomato Sauce (ടുമാറ്റോ സോസ്) - 1 Tablespoon

Soy Sauce (സോയ സോസ്) - ½ Tablespoon
Black Pepper Powder (കുരുമുളക് പൊടി) - ¼ Teaspoon

Indulge yourself in spicy and tasty schezwan noodles. Chef Ruchi Bharani teaches how to cook super easy and quick homemade noodles recipe.
Ingredients:
Oil - 1 & 1/2 tbsp
Onion - 1 small
Green Capsicum
Yellow capsicum
Cabbage - 1/2 cup
Carrot - 1 small
Bean sprouts - 1/2 cup
Soya sauce - 1 tbsp
Vinegar - 1 tbsp
Schezwan sauce - 2 / 3 tbsp
Salt to taste
Spring onion and bean sprouts for garnishing
Method:
- Heat oil in a wok/pan and saute ginger and garlic paste
- Add onions, green capsicum, yellow capsicum, cabbage, carrots, bean sprouts and cook them on high flame around 2 mins.
- Add soya sauce, vinegar, schezwan sauce and mix well everything
- Add the noodles, salt and give a good mix.
- Sprinkle some spring onions and mix it
- Serve the noodles hot after garnishing it with some more spring onions and beans sprouts.

Method
1. For the noodles to cook – take a pan, add enough water, add some salt as required and add Hakka noodles.
2. Once its 90% cooked take it off the flame and strain it, add some oil so that it won't stick to each other.
3. Take a pan, add sesame oil, some finely chopped garlic, onion and green chili.
4. Now start adding vegetables like carrot , shredded cabbage, yellow red and green bell pepper, some spring onion whites. (You can add other vegetables of your choice too)
5. Then add vinegar, soy sauce, red chili sauce, green chili sauce and pepper powder.
6. Finally, add the cooked noodles and toss it all together. Stir fry the noodles for 10 mins.
7. Check for seasoning and add salt if required.
8. Garnish it with some spring onion greens.
9. Serve the Chili Garlic Noodles hot.
