How To make Golden Orange Pancakes
-JUDI M. PHELPS 3/4 c All-purpose flour
3/4 c Whole wheat flour
1/4 c Wheat germ
2 ts Baking powder
1 1/2 ts Sugar
1/2 ts ;salt
3/4 c Skim milk
3/4 c Unsweetened orange juice
1 Egg; beaten
1/2 ts Grated orange rind
Vegetable cooking spray Combine first 6 ingredients in a large bowl; make a well in center of mixture. Combine milk, orange juice, egg, and orange rind; add to dry ingredients, stirring just until moistened. For each pancake, pour 1/4 cup batter into hot griddle or skillet that has been coated with cooking spray. Turn pancakes when tops pancakes (85 calories each). BLUEBERRY ORANGE PANCAKES WITH MAPLE SYRUP
Orange and blueberry pancakes, so refreshing and delicious. Enjoy these pancakes for breakfast and start your day with high spirits. You could make these ahead of time and can be stored in the refrigerator.
Ingredients
All purpose flour or Gluten Free flour- 1 1/2 cups
Baking powder- 3/4 tbsp
Salt- 1/4 tsp
Sugar- 3 tbsp
Orange Zest, grated- of 1 medium orange
Orange juice, freshly squeezed- 1/4 cup
Egg, large-1
Milk- 3/4 cup
Vanilla extract- 1 tsp
Butter, melted- 2 to 3 tbsp
Blueberries- 1/2 to 1 cup
Butter, unsalted- to grease the pan
Maple syrup or honey- to pour on pancakes
Instructions
In a large bowl, combine flour, baking powder, salt, sugar and orange zest.
Whisk together the orange juice, egg, milk, vanilla extract and butter till smooth constituency.
Add blueberries and combine well.
Heat a non-stick pan over medium heat.
Add ½ tbsp butter, let it melt.
Pour a large spoonful of pancake batter onto the pan, cook both sides till light golden brown in color.
Serve warm and pour maple syrup or honey over the pancakes.
Enjoy and feel refreshed.

Orange oat Poffretjes with orange butter- Healthy Dutch pancakes that are easy, fluffy and delicious
Poffertjes are a traditional Dutch batter treat that resembling small, fluffy pancakes, with a light, spongy texture. These are delicious gluten free ones made with oat flour and the freshness from oranges. So easy to make you just need to throw everything in a bowl, mix and let it sit and its ready! Absolutely fluffy and feels like a soft pillow in your mouth. Serve them with an orange butter, maple syrup, whipped cream and/or fresh fruit. These make a wholesome delicious breakfast or even a snack!

Ingredients:
Orange oat Proffertjes:
1 1/4 cup warm milk- any milk of your choice
2 tsp instant yeast
1/4 cup orange juice
1 tsp Orange zest
1 1/2 cup oat flour
2.5 Tbsp sugar
1/2 tsp Salt
1 tsp baking soda
1 egg
Orange butter:
2 tbsp butter
1 tsp orange juice
2 tsp powdered sugar
1/4 tsp orange zest
Directions:
In a bowl add milk and sprinkle yeast over it. Whisk it and let it sit for 5-10 mins till frothy.
Add orange juice and whisk it in.
Add orange zest, oat flour, sugar, salt and baking soda and mix it together till almost combined.
Add the egg and whisk till combined.
Cover it and let it sit for 45 mins till it rises.
Orange butter- whisk together butter, orange juice, orange zest and powdered sugar. It is ready to use.
When the batter is ready, heat up a proffertjes pan on low-medium heat.
Brush some of the orange butter in the cavities and fill the cavity about 3/4th the way up. Let it cook for 2-3 min till the bottom layer starts browning and flip it over using tongs or a knife. Let the other side cook for 1-2 mins and serve warm.
Serve warm with orange butter, maple syrup, powdered sugar, whipped cream and fresh fruit.
