3 cn Sweet Potatoes (See Note)
1/4 c Brown Sugar, Firmly Packed
1/4 c Honey
1 tb Cornstarch
1/2 ts Ground Cinnamon
1/4 ts Ground Nutmeg
2 ts Orange Rind, Grated
2 tb Butter or Margarine
1/2 c Pineapple Juice
1/4 c Walnuts, Chopped
Note: If using canned sweet potatoes, obtain 3 16-ounce cans of cut potatoes in light syrup. Drain before using. If using fresh potatoes, use 6 medium sweet potatoes (about 3/1/2 lbs.). Cook in boiling water to
cover 20 to 25 minutes or until tender. Lot cool to touch. Peel and cut into
1/2-inch slices. Arrange sweet potatoes in a lightly greased
11x7x1-1/2" baking dish and set aside. Combine brown sugar, honey, and next 6 ingredients in a saucepan. Cook over medium heat, stirring constantly, until mixture begins to boil; boil 1 minute, stirring constantly. Pour over sweet potatoes. Sprinkle with

Ingredients ⬇️
3 1/2 – 4 pounds sweet potatoes, peeled and cut into 1” pieces
4 tablespoons unsalted butter, 1/2 stick
3/4 cup packed light brown sugar
1/2 cup heavy cream
1 teaspoon kosher salt
1 tablespoon pure vanilla extract
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Topping
2 cups mini marshmallows
1/2 cup all-purpose flour
4 tablespoons unsalted butter
6 tablespoons packed light brown sugar
1/4 cup old fashioned rolled oats
1/4 teaspoon ground cinnamon
Instructions ⬇️
Preheat oven to 350°F. Grease an 8”x10” casserole dish (8×8 or 9×9 works too).
Fill a large pot with sweet potato pieces and water. Bring to a boil over high heat. Cook until fork tender. Drain potatoes and place back into pot. Mash potatoes with a potato masher or blend with an electric mixer, until mostly smooth. Add remaining ingredients (except topping ingredients). Mix until combined.
Spoon sweet potatoes into casserole dish and smooth out. Sprinkle top of sweet potatoes with marshmallows.
Melt butter in a medium microwave safe bowl. Add remaining ingredients. Mix with a fork. Sprinkle over top of casserole.
Bake for 20-25 minutes until streusel is crisp and marshmallows are golden brown.
Serve and enjoy!

Cook the potatoes ahead of time to speed up the process ????
Oven temp -350f roast the potatoes for 1-2 hours
Then bake casserole for 25 minutes
Then another 5-8 minutes after adding the marshmallows
Ingredients:
3 lbs orange sweet potatoes
4-5 tbsp brown sugar
1/2 tsp salt
1 tsp ground cinnamon
1 tsp vanilla
1/4 cup heavy cream
1/4 cup melted unsalted butter
2 eggs
For the pecan streusel topping
1/4 cup brown sugar
1/4 cup APF
1/4 cup old fashioned oats
1/2 cup chopped pecans
1/2 tsp ground cinnamon
1/4 cup melted butter
Mini Marshmallows to top it off!!!!

2.5 lbs Sweet Potatoes
1 stick of butter
1 cup brown sugar
1 cup white sugar
1 shot of bourbon (optional) Spiced rum works nicely too
1 orange (juice and zest)
1 tbsp vanilla extract
1/4 tsp butter extract
1/4 tsp maple extract
1 tsp ginger paste
1-2 tsp cinnamon
pinch of nutmeg
1 pinch of salt
Directions: Peel and cut sweet potatoes into bite sized pieces. Clean and then dry thoroughly. Add to a 9x11 casserole dish. In a saucepot, make your candied mixture and pour over sweet potatoes. Toss them to ensure they are coated evenly. Cover with foil and place in a 400 degree oven. Total cook time will depend on size of potatoes but should be between 45-60 minutes. Remove foil cover during the last 15-20 minutes. Stir potatoes every 15 minutes to ensure they are cooking evenly. They are done when they are fork tender and fully caramelized.
