How to make Glazed Lemon Butter Cookies Recipe
Glazed Lemon shortbread cookies Recipe
☞ Serving: 10 cookies
✎ Ingredients
☞ For the cookie dough
unsalted cold butter 65g
all-purpose flour 100g
rice flour 25g
powdered sugar 25g
a pinch of salt
milk 15g
☞ For the glaze
lemon zest 1pc
lemon juice 8g
powder sugar 40g
✎ Instructions
1. Sift flour, powdered sugar, rice flour and a pinch of salt, then add all dry ingredients into a large mixing bowl.
2. Toss cold butter in the dry ingredients until each side is coated. Roughly cut the butter into small cubes and toss in the flour again, until each side is coated. Freeze for 1 hour.
3. put frozen butter and dry ingredients into a food processor, and pulse a few times until the mixture resembles coarse, sandy crumbs.
4. Add the mixture in a large bowl, pour 15g milk into it and mix well, then use your fingers to quickly rub the mixture until it resembles from flakes to a dough ball.
5. Transfer the dough to a baking paper, cover another paper on top, then roll out to 1cm thick. Freeze for 1 hour.
6. Take the dough out of the fridge and cut it into a 3x5cm rectangle.
7. Preheat the oven to 130°C, bake for 45-55 minutes. Remove and let cool on rack.
8. Zest a lemon in a small bowl, set aside. Squeezing out about 8g of juice from lemon.
9. Make the glaze and garnish. In a small bowl, whisk 8g of lemon juice and 40g of powdered sugar together. Dip the top side of the cookie into the glaze and place it on a wire rack, and garnish a little lemon zest on top to set.

Christmas sugar cookies, roll-out dough with simple glaze icing

***RECIPE, MAKES 4 DOZEN COOKIES***
3/4 cup (6 oz, 170g) butter, softened
2 eggs
1.5 cups (300g) sugar
1 tablespoon vanilla (if not using, replace with milk or water)
1 teaspoon kosher salt (or half that if you're using salted butter)
2 teaspoons baking powder
3 cups (360g) flour
powdered sugar

sprinkles, food coloring, etc.
Mix the granulated sugar into the softened butter and then mix in the eggs until smooth. Put in the vanilla, salt, baking powder, and a third of the flour. Mix until smooth. Add the remaining flour gradually until smooth. Consider mixing in even more flour than indicated above, until you get a dough that's just barely sticky. Cover and refrigerate for at least an hour before rolling.
Heat oven to 350ºF/180ºC convection, or 375ºF/190ºC if you don't have a convection fan.
Dust a large work surface liberally with powdered sugar or flour. Roll out the cold dough, nice and slowly, rotating it very frequently as you go to make sure it doesn't stick to your work surface. When it's 2-3mm thick, use cookie cutters to punch out shapes. It works best if you push straight down then twist a little to release them.
Put all the cookies onto baking sheets lined with parchment — you can position them very close together. Gather up the trimmings into a ball, but get the ball cold again before rolling it out and punching out more cookies.
Bake until the edges just barely start to brown, about 20 minutes. Consider rotating the pans halfway through, especially if you don't have convection. Let the cookies cool throughly before decorating them.
To make your icing, put a lot of powdered sugar in a bowl and whisk in just enough milk to turn it into a smooth glaze — it won't take much. You can add food coloring to the glaze, but you may need to add more powdered sugar to balance the extra moisture.
Ice and decorate the cookies, and let sit overnight — the icing will harden and the cookie will soften.

These no-spread sugar cookies are great for cutouts, perfectly sweet, and totally delicious. Unlike other sugar cookies that become a gloopy mess at room temperature this dough is easy to work with and needs minimal chilling, and of course they Keep their shape when you bake them! Perfect for cut out cookies.

Caramelised nuts (or candied nuts) are great as snacks, especially for kids! But they are also used widely as decorations for cakes/cookies etc.

▶Candied Nuts◀
Almond or any other types of nuts 125g
Sugar 40g
Water 10g
Butter 5g
① Add water + sugar into the saucepan and raise the temp to 115℃ to make a sugar syrup.
② Add in the nuts and mix well.
③ The sugar will crystallise over the nuts - keep mixing it with your spatula and the crystallised sugar will turn into caramel.
④ Turn the heat off when you have the perfect brown colour coated on the nuts.
⑤ Add the butter and mix well.
⑥ Place it on a silicone mat/parchment paper and let it cool at room temp.
Storage: Can store in an air-tight container in the fridge for a month.
