How To make Gingerbread Men/Diabetic
2 c Wheat flour; whole-grain
1/4 ts Salt
1 ts Baking powder
1 ts Baking soda
2 c Bran
3 ts Ground ginger; or to taste
1 ts Allspice
1 ts Ground cinnamon
1/3 c Margarine
6 tb Sugar substitute
1 Egg; beaten
3 tb Orange juice
1 ts Margarine; to grease
Recipe by: The Diabetic Cookbook Heat oven to 350 F. Mix flour, salt, baking powder and baking soda, bran and spices together, then rub in margarine until the mixture resembles fine breadcrumbs. Stir the sweetener into the egg and orange juice and beat into the flour mixture. Knead well, and roll out thinly on floured board. Using a cutter, cut into gingerbread men shapes (or other shapes) and place on greased cookie sheets. Bake for 15-20 min or until crisp and lightly browned. Gingerbread Cookies are one of the most delicious traditions over the Holidays.
These Keto Gingerbread Cookies tastes as delicious as the sugar version. They crisp up perfectly and have just enough of gingerbread flavor to get you in the Holiday spirit.
Decorate them with Sugar Free Royal Icing and you can serve them to any guest!
This recipe makes 50X2.5” cookies or 100X1.5”
Keto Gingerbread Cookies
Ingredients:
2 Cups Almond Flour (200 grams)
½ Cup Coconut Flour (53 grams)
¾ tsp Ground Cinnamon ( 2 grams)
½ tsp Ground Cloves (1 gram)
½ Tbsp. Ground Ginger (3 grams)
½ tsp Baking Soda (2 grams)
¼ tsp Xanthan Gum
⅛ tsp Salt
½ Cup Unsalted Butter, softened (113 grams)
½ Cup Brown Swerve, packed (95 grams)
1 Large Egg (50 grams)
½ Tbsp. White Vinegar (5 grams)
1-2 tsp Cooking Molasses (6.5-13 grams)
*note Cooking Molasses are used for color and flavor. They give the cookies true gingerbread flavor. However, you can either omit them, or use molasses alternatives that can be purchased online:
Sugar Free Royal Icing
Ingredients:
1 ½ Cup Confectioners Swerve (210 grams)
3 Tbsp. Liquid Pasteurized Egg Whites (45 grams)
¼ tsp Cream of Tartar
¼ tsp Vanilla Extract
White Food Coloring - optional
Bake smaller cookies at 350 °F (177 °C) for 8-10 minutes and larger ones for 10-12 minutes, or until the edges start turning slightly brown. Let the cookies cool completely on the tray.
Store iced cookies in a sealed container in the fridge. Store cookies without the icing at room temperature for a week.
Cookies will be crispier and more flavorful the next day.

At Christmas, we always have lots of gingerbread hanging about, from gingerbread men to gingerbread houses. Why not turn all these spare cookies into something even more delicious? Gingerbread cookie ice cream. This is a handmade, no-churn recipe, it's an easy-to-follow tutorial. All the ingredients are relatively inexpensive. A first-time baker could easily attempt this recipe.

• Prep Time: 10 mins.
• Chilling Time: 5 hours.
• Total Time: 5 hours 10 mins.
*SERVINGS.*
• Serves 8 people.
*INGREDIENTS*
• 1 can (397g/14oz) condensed milk.
• 2 cups (480ml/16.2fl oz) double/heavy cream.
• 1 tsp Vanilla Extract (optional).
• 1½ cups (150g/5oz) Gingerbread Cookies, crushed.
• Gingerbread sprinkles (optional).
*METHOD*
1. Place the double/heavy cream in a large bowl, and whip to stiff peaks.
2. Add condensed milk and vanilla extract. Stir until the mixture is thick.
3. Add the crushed gingerbread cookies and fold them into the condensed milk mixture.
4. Transfer to a 2Ib loaf tin. There's no need to line the tin.
5. Level the top of the ice cream. Then sprinkle on the remaining crushed gingerbread crumbs. Add decorative sprinkles.
6. Cover with cling film and freeze for at least 5 hours or overnight.
7. Remove from the freezer and allow it to stand for 5 minutes before serving.
8. Use an ice cream scoop dipped in warm water to scoop out the ice cream.
9. Mmm Scrummy!!!
*STORAGE.*
• Homemade ice cream can be kept in the freeze for 8 weeks.
• Keep the ice cream container lid tightly closed when storing in the freezer to reduce the formation of ice crystals.
