How to cook perfect fluffy, non sticky rice | Toast first garlic and rice recipe ???? ????
The secret of perfectly cooked rice: use a non-stick lidded pan with the right size and toast the rice first with some chopped garlic. This simple method guarantees that you won’t be eating sad, mushy rice ever again! Serves: 2 - 3
Ingredients:
2 tbsp vegetable oil (or other neutral-flavored oil)
2 - 3 garlic cloves, finely chopped
1 cup (200g) basmati rice
2 cups (450ml) water
pinch of coarse sea salt
Method:
Heat the oil over a medium high heat, swirling it to cover the bottom (for serving 2 - 3 people, use a 16cm diameter non-stick pan). When hot, reduce the heat to low, add the garlic, and fry for about half a minute before it starts to turn golden.
Add the rice (no need to rinse) and a pinch of salt. Stir well with a wooden spoon so that everything is well coated in oil. Sauté over high heat stirring all the time for about one minute or until the grains start to turn white and opaque.
Measure twice the amount of water to rice in the same container used to measure the rice, and pour into the pan. Stir once, making sure that no grains stay attached to the sides of the pan, and over a high heat bring rice and water to a boil. From this point on, don’t stir the rice anymore! Turn down the heat to the low and let the rice cook, uncovered, for about 4 minutes or just until the water has reduced and the first grains start to show on the surface. At this point, put the lid on, and let it cook a further 8 - 10 minutes. Do not take the lid off during this time.
After this time, turn the heat off, and let the pan rest with the lid on, for at least 5 minutes. Fluff the rice with a wooden fork. Taste, and if necessary, stir in a bit of fine salt.

2-3 lbs Bone-in Skin On Chicken Thighs
Avocado Oil
1 Onion
1 Red and Green Bell Pepper
3 cloves of garlic
1.5 tsps dried oregano (or italian seasoning)
2 cups long grain white rice (sub cauliflower rice for keto)
4 cups chicken broth/stock
1 tbsp better than bouillon chicken base
salt, pepper, garlic, onion powder, cayenne
smoked paprika, adobo
Fresh chopped parsley
Fresh thyme
2 tbsps butter
Directions:
Season chicken generously on all sides and prep veggies. Heat skillet over medium heat, add avocado oil, and sear chicken for 1-2 minutes per side or until skin is golden brown. Remove chicken and add butter and veggies. Cook veggies until they begin to get tender and then add chicken base. Add rice and mix to combine. Toast rice for 2-3 minutes. Deglaze with white wine or chicken stock. Bring to a simmer and then add chicken broth. Bring back to a simmer and add chicken. (Add thyme here) Cover with a lid and reduce heat to a gentle simmer for 20-25 minutes or until chicken is fully cooked and rice is done. Season to taste and garnish with parsley.

Ingredients (for 4 servings)
- 700g Raw Cubed Chicken Breast
- 1 tbps Oregano
- 1 tbsp Cumin
- 1 tbsp Paprika
- 1 tsp Chilli Powder
- 1 tbsp Garlic Powder
- 1 tsp Salt
- 1 tsp Olive Oil
- 1/2 Lemon Juice
Cook on high heat for 3-4 mins each side till golden brown
- Shredded Lettuce
- Chopped Tomatoes
- Garnish Coriander (optional)
Garlic Sauce
- 150g Fat Free Greek Yogurt (any yogurt works)
- 50g Light Mayo
- 2 Minced Garlic Cloves
- Chopped Coriander/Cilantro
- 1/2 tsp Cumin, Salt, Pepper
- 1/2 Lemon Juice
You can store this sauce for multiple days in a bottle or container, perfect to prep in batches
Golden Rice
- Basmati Rice (207g uncooked gives about 560g cooked weight | 140g Cooked Rice per serving)
- season with Turmeric, Cumin, Paprika, Garlic, Salt
- Add water then bring to a boil then simmer on low heat for 8-10 mins till fully cooked
Distribute into 4 equal servings and enjoy!

Important notes
- When reheating the meal prep, i would put the sauce and lettuce seperately then heat the rice and chicken in a microwave
