How To make German Kasekuchen
CRUST:
2 c Unbleached Flour; Sifted
4 tb Butter; No Margarine
1/2 c Sugar; Granulated
1 Egg; Large
1 ts Baking Powder
CHEESECAKE:
3 c Cottage Cheese; 1 1/2 lbs
1/2 c Cornstarch
1 ts Baking soda
1 c Sugar; Granulated
4 Eggs; Large
1/2 ts Lemon Rind; Grated
1/2 ts Vanilla Extract; Real only
1 c Sour Cream
1 c Raisins
CRUST: In a large mixing bowl, blend all the ingredients, cutting in the butter and working the mixture with your hands until it is well mixed and workable. Divide the dough into 2 equal portions. Use one half to line the bottom of a greased 9-inch springform pan, the other half to line the sides of the pan. Either roll out the dough or press it in with your fingers. Chill before filling. CHEESECAKE: Preheat the oven to 375 degrees F. Press the cottage cheese through a sieve. Combine the cornstarch and the baking powder and set aside. In a large mixing bowl, combine the cottage cheese with the sugar, eggs, lemon rind and vanilla. Beat until very smooth. Add the dry mixture to the cheese and blend well. Stir in the sour cream and raisins. Pour the cheese mixture into the prepared crust and bake for one hour, or until done. The center will remain soft. Turn off the oven and prop the door open. Allow the cake to cool to room temperature. Serve at room temperature as well. -----

My producer Olli and I both were surprised of the greatness of this particular recipe for German Cheesecake. That´s why we chose it for you.
You might know it about american cheesecake - there are books written about it, with hundreds of various cheesecake-recipes.
It´s the same here in Germany. Cheesecake is so popular. But the general way it´s being done is a little different. The german version is a little lighter than the american one.
Nevertheless it´s full of good things - like carbohydrates, sugar, fat and of cours calories!!! ;-)
I´ve done quite a research about it to find the one that I can recommend to you.
And what can I say: Since I found this recipe I have never made another cheesecake again.
It´s more than just worth a try. It´s a must have!
So: Get to the kitchen, forget about any diets and start baking this.
Enjoy.

I´m a german journalist. I have been working on german tv for many years. Today I work as a coach. Cooking is my big hobby. I love recipes and I love cook books. I collect them. My favourite cooks are Jamie Oliver and Yotam Ottolenghi. I also like the youtube videos from Gordon Ramsay. I´m not too much into complicated recipes. I like it easy. Anyway I prefer to eat at home together with my family and friends, but to go to any restaurant. I have never been to a restaurant with a star from guide michelin. I think real food is much more interesting. Though I am fascinated by people like Ferran Adria and his brother. But I´m about to loose my central topic: Cooking.

Guten Appetit!
