Khachapuri with Tarragon (Khachapuri Tarkhunit)
Tarragon (tarkhuna) gives this khachapuri a unique flavor. Georgians are big fans of tarragon; after cilantro, it is the second favorite herb. Sometimes I think that romantic Georgians give such preferential treatment to tarragon because they associate it with spring, renewal, hopes, and expectation of the new season. Tarragon is eaten fresh with pungent cheese wrapped in thin lavashi bread. It also stuffs fish, is used in mushroom and meat stews, added to the pickled cucumbers, even a bright green soda is made from it. It also appears in this khachapuri. Out of habit, Georgians still call it khachapuri although the tarragon replaced cheese in the filling. Some refer to it as tarragon pie. Never mind the name, it is delicious.
It can be made with any type of dough, but especially good it is when made with unsweetened puff pastry or yogurt pastry.
Ingredients for Khachapuri with Tarragon (Khachapuri Tarkhunit)
Makes 1 12-inch square khachapuri
Tarragon Filling
4 large eggs, hard boiled and coarsely chopped
3 bunches of tarragon (approximately 2 cups/5.3 oz/150g) coarsely chopped tarragon leaves
2 bunches of scallions (approximately 1 1/4 cups/4.6 oz/130g), chopped
1/2 stick unsalted butter (1/8lb (2 oz)/58g), softened
Fine sea salt and freshly ground black pepper
Yogurt Pastry for Khachapuri with Tarragon
2 ½ cups all-purpose flour (14 oz/400g), sifted, plus more for kneading and dusting
1 teaspoon baking powder
½ teaspoon coarse salt
1 stick unsalted butter (¼ lb (4 oz)/115g), cut into small bits
½ cup/140g matsoni or plain natural Greek yogurt
2 large eggs, beaten
1 large egg yolk beaten with 1 teaspoon water to make an egg wash
