Gordon Ramsay Cooks Shrimp Scampi In Just 10 Minutes | Ramsay in 10

This week Gordon's first guest is none other than...him! Watch as he cooks up a delicious Shrimp Scampi with capellini Pasta that you can easily make on any busy evening. Yields 1 serving
Ingredients
8-12 each 16/20 peeled, deveined shrimp
4 oz dry capellini / angelhair pasta
2 Tbsp Extra Virgin Olive oil
3 each garlic bulbs
1 each large shallot, small diced
2 tsp chili flakes
2 each lemons
¼ cup white wine
2 Tbsp capers
½ Cup cherry tomatoes, halved
½ Cup seafood stock
2 oz butter, cubed
1 parmesan cheese wedge
1 sprig basil, picked
TT Salt and Fresh Cracked Black Pepper
Method
Add water to a 4 quart sauce pot. Salt liberally, cover with a lid bring to a boil.
Heat a medium nonstick sauté pan on medium heat with one tablespoon of olive oil. When hot add the shallots, finely grate the garlic bulbs into the pan and sauté for 2 minutes to soften them. Deglaze the pan with the white wine and cook until it is almost evaporated from the pan. Add the seafood stock, chilli flakes, capers, cherry tomatoes and lemons (zested and juiced). When the sauce comes to a simmer, season the raw shrimp with salt and pepper and poach in the liquid for about 1 minute per side. Add the cubed butter to melt. Taste and season the sauce accordingly.
Meanwhile, when the pot of water begins to boil, add the pasta and use tongs or a fork to gradually push it into the seasoned water as it starts to soften. Boil the pasta, stirring occasionally so it doesn’t stick together, for about 3-5 minutes, or until al dente. Strain the pasta and quickly add it to the pan with the scampi sauce and cooked shrimp. Toss the pasta in the sauce to coat evenly. Finally, tear the fresh basil leaves and toss into the pasta before plating.
Plate the cooked pasta into a medium size bowl with some height. Garnish with a grating of parmesan cheese.

Shrimp Scampi Spaghetti Squash with Green Beans | EP 05 Season to Season with Stella
Shrimp Scampi & Spaghetti Squash (HALF RECIPE)
Serves 3

Ingredients
1 pound deveined/ large shrimp (shell removed)
1Ttbsp Garlic
3 cups baked Spaghetti squash
½ pound fresh string beans, washed, tips cut and halved
2 Tbsp fresh squeezed lemon juice
1 tsp lemon zest
Optional fresh parsley or cilantro for garnish
Baking & Spices
1/8 tsp Black or white pepper ground pepper
1/2 tsp sea salt
1/4 tsp Red pepper flakes (optional)
Oils & Vinegars
tbsp Olive oil
Dairy
2 Tbsp Butter
Wine
1/2 cup dry White wine, dry
Directions for cooking shrimp:
Season cleaned shrimp with lemon juice, salt and pepper.
Place olive oil, butter & garlic on low heat to sauté. Be careful not to burn the garlic.
Add shrimp and saute until done, but do not overcook. Remove from pan and allow the juices to reduce/thicken slightly.
Add white wine and allow to reduce to about half the original liquid.
Toss squash with white wine sauce. Plate shrimp on top. Drizzle a little of the white wine sauce over shrimp.
In a pan sauté string beans noted above with 1Tbs olive oil, 1Tbs butter and ½ tsp salt –and plate when ready to serve
Enjoy!
Options: Scooping out baked Spaghetti Squash
Pre-bake the spaghetti squash then Scoop out from shell and reheat before plating
OR
Wear an insulated or hot glove/mitt to scoop out hot, freshly cooked spaghetti squash from shell and plate immediately

Serves 6

2 Lbs. Shrimp, large (cleaned & deveined) OR clean frozen shrimp
Produce
2 Tbsp. Garlic
2 tsp Lemon, zest
1/3 cup Parsley, fresh to garnish (optional)
4 cups cooked Spaghetti squash (about 2 medium spaghetti squash)
Condiments
4 Tbsp. Lemon juice
Baking & Spices
1/4 tsp Black pepper, ground
1 tsp salt
1 tsp Red pepper flakes (optional)
Oils & Vinegars
4 Tbsp. Olive oil (reserve 1 Tbsp. for white wine sauce)
Dairy
4 Tbsp. Butter (reserve 1Tbsp. for white wine sauce)

Season the shrimp with salt and black pepper.
Add oil to a skillet, along with butter.
Add the shrimp and cook thoroughly.
Remove the shrimp.
Add garlic, and combine. Add the red chili flakes and combine.
Add lemon juice, and re-add the shrimp.
Add butter and garnish with fresh parsley.
