2 c Canned green olives; drained 2 Garlic cloves; slivered 3 sl Lemon (thin slices) 1 ts Black peppercorns 3 Bay leaves Whole sprigs dried thyme -OR- Basil -OR- oregano -(optional) 1/4 c Sherry or vinegar Olive oil Combine olives, garlic, lemon slices, peppercorns, bay leaves, sprigs of thyme and sherry in jar. Add oil to cover. Marinate at least 24 hours or overnight to blend flavors. Makes 2 cups (C) 1992 The Los Angeles Times

Marinated Olives with Lemon, Oregano & Garlic
This recipe showcases the ease and flexibility of Olives from Spain. The sweetly herbed marinade works perfectly with the flavor juxtaposition of the Spanish Manzanilla, Gordal and black olives mixture. Able to be completed in minutes, this appetizer will get the party going every time.

INGREDIENTS
- 16 oz olives - 1 cup olive oil - 3 cloves garlic, peeled - orange peel from 1/4 of orange - lemon peel from 1/4 of lemon - 3/4 tsp red pepper flakes - 3 bay leaves - 2 4-inch sprigs rosemary - 1 tsp black pepper
INSTRUCTIONS
- In a small saucepan, combine the olive oil, garlic cloves, orange peel, lemon peel, red pepper flakes, bay leaves, rosemary, and black pepper.
- Gently warm over low heat until the oil is warm to the touch but not boiling, 4-5 minutes.
- Remove from the heat and pour over the olives. Allow to marinate at room temperature for 4 hours.
