Low Carb, Keto Pizza using Zucchini & Garbanzo Bean Flour
This is a delicious alternative to wheat flour crust Pizza.Enjoy!
RECIPE
2 medium-sized zucchinis
1/2 cup Garbanzo Bean/Gram Flour
1 cup shredded mozzarella cheese
1/4 cup grated parmesan cheese
1/4 teaspoon garlic powder
1/4 teaspoon dried oregano
Salt and pepper to taste
1/2 cup pizza sauce
Toppings of your choice (e.g. pepperoni, mushrooms, bell peppers, etc.)
METHOD:
Preheat your oven to 425°F (218°C).
Grate zucchinis. Add 1 tsp salt, mix and let sit for 15 mins. (osmosis will happen) Squeeze liquid out of zucchini and put in separate bowl. In bowl with zucchini, add flour, garlic powder, oregano and pepper to taste. Mix and incorporate all ingredients.
Pour this mixture into a 9-10 inch frying pan or griddle, spread mixture to cover pan. Fry for 3-5 minutes. Turn carefully to fry other side for 3-5 mins. You can use a plate to turn over into pan. Spread pizza sauce on top of Zucchini crust, Add cheeses(mozzarella, Parmesan and toppings of your choice) If using mushrooms, make sure you sauté mushrooms first to remove moisture, or else it will make a watery mess on top of the pizza. Place into Oven and Bake for 12-15 minutes or until the cheese is melted and bubbly.
Remove from the oven and let it cool for a few minutes before serving.
Enjoy your delicious and healthy keto low carb pizza with zucchini crust!
