Vegan Omelet/ Chickpea eggless omelet (gluten-free, nut-free)
Vegan Omelet Spanish style using chickpea flour? Is this even possible? Yes, it is! I am absolutely IN LOVE with this recipe, it is extremely versatile and highly nutritious due to all that lean clean protein chickpeas have!

Ingredients for vegan Omelet/ chickpea eggless omelet (gluten-free, nut-free):
2 1/2 cups of boiled cubed potatoes
1 cup of chickpea flour
1 cup of water
1/2 cup of red peppers
1/2 cup of onions
1/3 cup of frozen peas
2 cloves of garlic, minced
1 cup of spinach
1 TBSP of fresh parsley
1 tsp of oregano
1 tsp of salt
1/ tsp of black pepper
1 tsp of sweet paprika
1/2 Tsp of baking soda
2 tablespoons of vegan butter
DIRECTIONS:
- boil the potatoes until cooked but firm, let them cool completely
- in medium heat, add 1 tablespoon of the butter and saute the onions and red peppers to a skillet, cook until soft
- add the garlic and saute for 40-50 seconds more
- mix all the dry ingredients to a bowl, mix well
- add the water, mix it well
- add lemon juice, mix
- add the potatoes, mix carefully so they don't break
- in a frying pan, add 1 tbsp of vegan butter, heat then add the mixture
- cook it medium-low heat for 5 to 6 minutes each side, add more butter if needed
- It cannot be frozen.
